🍳 Slimming World Shakshuka - Easy, healthy & super satisfying. Looking for a hearty brunch made from simple store-cupboard essentials? This flavour-packed Shakshuka uses tinned tomatoes, fibre rich beans and tasty spices to create a rich, warming dish that’s perfect any time of day — and totally Slimming World-friendly!

⏱️ Ready in: 40 minutes
🍽️ Serves: 4
💚 Diabetes UK approved recipe
✨ Free on Slimming World

🥘 Ingredients
Low-calorie cooking spray
1 medium onion, finely chopped
3 garlic cloves, crushed
2 × 400g cans chopped tomatoes with herbs
1½ tsp smoked paprika
1 tsp ground cumin
100g baby spinach
1 × 400g can cannellini beans, drained & rinsed
4 large eggs
Fresh parsley, roughly chopped (to serve)

👩‍🍳 Method
Mist a large non-stick frying pan with low-calorie cooking spray and place over a low heat. Add the onion, garlic and a splash of water. Cover and cook for around 10 minutes, until softened.
Stir in the tomatoes, paprika and cumin. Simmer uncovered for 10 minutes until the sauce thickens.
Add the spinach and cannellini beans, then cook for another few minutes until the spinach wilts.
Make four small wells in the mixture and crack an egg into each. Cover and cook for 5–7 minutes, or until the whites are set and the yolks are cooked to your liking.
Finish with black pepper and fresh parsley. Serve hot and enjoy!
