When clients say “I don’t have time to make lunch when working from home” 🤷🏻‍♀️

👉🏻 I tell them leftovers are your friend! 👈🏻

Some of my favourite meals are thrown together leftovers. Today’s one-pan lunch was

✅ Egg whites, cooked until just setting, then into the same pan went the
✅ Ratatouille
✅ Smoked salmon
✅ Chick peas
✅ Black rice
✅ Topped with pickled red onion

Seriously on the plate in under 10! ⏰ And includes 9 of my 30 different plants for the week 👌🏻

Remember you’ve got 3 meals a day in which to fuel your body so don’t hold back … a quick piece of toast or cheese sandwich just doesn’t cut it as a meal.

🌟Sardine one-pan tray bake🌟

One of the meals on my meal plan this month. Quick, tasty & a good source of protein and healthy fat. What’s not to love!

💠Sardines are small pilchards (I only just discovered this)!

💠Fresh sardines contain ~25g protein per 100g, as well as good sources of mostly unsaturated fats, especially omega 3 fatty acids (making them so good for heart health & the brain). Omega 3s are essential fatty acids, meaning they can’t be produced by the body, so you must get it from food (or supplements but always food first!)

💠Canned sardines tend to be higher in calcium because the bones are soft enough to eat, but you will still get some calcium from fresh sardines.

Celebrating 25 years of the British Association for Nutrition & Lifestyle medicine (BANT) this weekend.

BANT members understand the huge impact diet and lifestyle have on our overall health. As members we are required to undertake hours of CPD every year and must adhere to BANT regulations. This is why it is important to make sure you always choose a registered practitioner.

In my clinic I run weight loss and peri- and menopause programmes, as well as offering a range of 1-2-1 programmes online and in-person working with clients to help them reach their health goals. Link in bio if you’d like to get in touch.

Leftovers for dinner tonight!

I’m always telling clients to batch cook and here’s why. I spent about an hour yesterday making some mid-week meals for the next few days and so pleased I did as it took all of 5 mins to throw this together tonight.

So delicious
- beetroot & feta salad with seeds
- broccoli, chilli, date salad with nuts
- tabbouleh made with konjac rice
- salmon (pre-cooked from supermarket)
- balsamic roast toms (which I forgot to add!)

Heaps of protein, mod-low carb, healthy fats & I count at least 15 different types of plant = happy guts!

Perfect for my post-workout dinner 💪🏻

Breakfast on my Perimenopause programme this morning … grain-free porridge. Found a pre-milled flax, sunflower, pumpkin & chia seed mix in the supermarket so was super quick to make. Added a grated apple for healthy gut, cinnamon to help stop sugar cravings and served with kefir yoghurt & berries. So yummy and so good for . My next is starting in April.
