PSA: it’s pancake day tomorrow. 🥞
This recipe is perfect for anyone looking to get more fibre and protein into their pancakes - ideal if you’re using weight loss medication, or simply want a healthier alternative.
This recipe is so simple. 🥞
1. Blitz together 2 eggs, 1 banana, 75g oats, 2 tbsp milk, 1 tsp baking powder, good dash of cinnamon. You could also make these into protein pancakes with a scoop or 2 of powder.
2. Heat a little extra virgin olive oil in your pan. (Don’t be afraid of using this in moderation, as long as it’s extra virgin, it’s packed with polyphenols which research shows are great for our health).
3. Pour in your blitzed batter, flip when the bottom can be easily plied up in one piece.
4. Top with fruit of choice and Greek yoghurt for extra protein.
