🌮 LivingWell Staff Picks: Healthy Meals We Love 🌱💚
This week, H is sharing her go-to easy weekday dinner — a vibrant one-wok wonder packed with colour, flavour, and nutrition. 🥕🌶️🍗 It’s quick, filling, and versatile. ⚡🍽️ Plus, any leftovers (if you can resist!) make the perfect wrap for lunch the next day—hot or cold. 🌯
Ingredients:
🌈 A rainbow of vegetables: bell peppers (red, green, yellow, orange) and plenty of red onions 🧅
🍗 Boneless chicken (breasts, inner fillets, or your favourite cut)
🫒 Olive oil for frying
🌶️ Spice mix of choice: Louisiana Cajun, paprika, Old Bay, Tex Mex, or garlic — finished with freshly ground black pepper 🧂
🧀 Aged Red Leicester cheese (or your favourite cheese)
🥑 Fresh avocado
🔥 Jalapeños for a kick
🍅 Cherry tomatoes
🥬 Crisp romaine lettuce
🥄 A dollop of crème fraîche to cool things down ❄️
👩🍳 Method:
🔪 Slice onions and peppers into thin strips.
🍗 Cut chicken into thin slices.
🔥 Heat olive oil in a wok, add spices, then toss in onions and chicken. Cook until golden and fragrant.
🧀 Grate cheese while the chicken cooks.
🥑 Prepare toppings: slice avocado, chop jalapeños, halve cherry tomatoes, and shred romaine.
🌯 When chicken is well browned, warm wraps in the microwave for 25 seconds to keep them soft.
🌯 Serving Ideas:
✨ Classic wrap: Fill with chicken, avocado, jalapeños, crème fraîche, and cheese.
🥗 Fresh plate: Serve chicken alongside a crisp salad of cherry tomatoes and romaine.
🧀🔥 Cheesy melt: Roll everything into a wrap and microwave briefly to melt the cheese.
