In the UK 1 in 4 people experience mental health issues each year, with 792 million people affected worldwide.

Similarly, in the UK 1 in 5 people suffer from IBS, typically experiencing 6 or more flare-up’s per year.

Lovely Vegan Chickpea & Lentil Curry Recipe:

Ingredients:

1 tbsp olive oil

1 medium yellow onion, chopped

3 cloves of garlic minced

1 medium green chilli pepper, pith and seeds removed then finely chopped

1 thumb size piece of ginger, skin removed then finely grated

2 tsp ground cumin

1 tsp turmeric

1/2 tsp garam masala

1/2 tsp ground coriander

1 medium green bell pepper, pith and seeds removed then roughly chopped

400g can of chopped tomatoes

400g cooked chickpeas

120g red lentils

200 ml vegetable stock

The juice of half a medium lemon

1/4 tsp sea salt

1/4 tsp cracked black pepper

75g spinach

Method:

Heat the oil in a large sauté pan. Add the onion and cook for about 10 minutes, until the onion is translucent.

Add the garlic, chilli pepper and ginger, stir well and cook for a minute.

Next add the spices, again stir well and cook for just a minute.

Now add the bell pepper, and stir.

Pour in the chopped tomatoes, stock, lemon juice and add the chickpeas and lentils. Add the salt and pepper then stir well.

Bring the pan to the boil, reduce the heat to a gentle simmer then cover the pan with a tight-fitting lid.

Cook for about 15 minutes stirring occasionally. Check the seasoning halfway through cooking.

Once the lentils are cooked and the sauce has thickened, add the spinach to the pan and put the lid back on for about two minutes. Take the lid off then stir in the wilted spinach.

Serve immediately with rice and some coriander (cilantro) leaves.

My Saturday night tipple!

Tastes better than any champagne, but without the hangover.

Kombucha is a fermented tea - rich in beneficial probiotics.

It’s also full of antioxidants, can kill harmful bacteria and can help fight disease.

Kombucha can also improve digestion, diabetes, strengthen the immune system, reduce blood pressure and aid detoxification.

It’s also claimed that kombucha helps with rheumatism, gout, haemorrhoids, nervousness and liver function. It may also fight cancer.

I love my week-day breakfast!

Deliciously Ella’s Nutty Granola - high in fibre and a great source of protein.

A tablespoon of flaxseeds - more fibre, and a good source of omega-3, magnesium, iron & zinc.

Dairy free coconut yoghurt - contains antioxidants and is a good source of protein.

Organic strawberries, blueberries & raspberries - loaded with anti-oxidants, more fibre, full of nutrients, helps fight inflammation, may lower cholesterol, great for your skin and may protect against cancer.

Banana - a source of vitamin C, contains manganese, which is good for your skin, contains potassium, which is great for your heart and blood pressure and they also aid digestion and give you an energy boost.

Sprinkled with nuts & seeds, which are a good source of protein, contain healthy fats, fibre, vitamins & minerals.

Keeps me full all morning.
