2 huge cabbages -> sauerkraut!
My mum left red and white cabbages in the fridge so I thinly sliced them, added chilli flakes, cumin seeds, peppercorns and salt and massaged them for what felt like a very long time until they released enough liquid. Packed it into a properly old crock, made sure liquid covered it, placed a cabbage on top and wait for the pro/pre biotic magic to happen!
