//QUICK AND EASY MINESTRONE SOUP//ā£ā£

I fell in love with minestrone soup when I tasted the legendary Olive Gardenās for the first time! This soup has become a staple for me, it is filled to the brim with veggies and deliciousness!!

Soups are a lunch time favourite of mine (multiple times a week when Iām at workš³), I find them so satisfying and filling.
ā£ā£
This recipe is easily changed as well - you can add and change the vegetables to fit your taste or even add in pasta (Iāve added 1/4 cup of barley this time!)

š±Minestrone Soup recipe:ā£ā£
ā£ā£
-2 tbsp olive oilā£ā£
-2 carrots, halved and dicedā£ā£
-1/2 red onion, dicedā£ā£
-2 celery stalks, slicedā£ā£
-1/2 cup frozen peasā£ā£
-2 cloves garlic ā£ā£
-4 cups vegetable broth ā£ā£
-1 can chopped tomatoesā£ā£
-1 can kidney beansā£ā£
-2 tsp dried mixed herbsā£ā£
-1 bay leafā£ā£
-2 handfuls of spinachā£ā£
ā£ā£
1ļøā£Heat olive oil on medium heat, add carrots, onion, and celery. Cook until tender (5 minutes).ā£ā£
2ļøā£Add in garlic, give it a big stir. Add in veg broth, tomatoes, frozen peas and spices. Bring to a boil.ā£ā£
3ļøā£Turn down to a low simmer, add in beans. Cook for 15 minutes (30 mins if you add barley).
4ļøā£Stir in spinach, cook for further 5 minutes.ā£ā£
