What do you make (apart from lanterns) with your pumpkins?
I made ROASTED PUMPKIN SOUP!
Here is the recipe…..
1 kg pumpkin
1 onion
1 stick celery
4 cloves garlic
2 tablespoons olive oil
1 sprig rosemary
1 teaspoon smoked paprika
750 ml vegetable stock
1 tablespoon tomato purée
Sprinkle of chilli flakes
Cut the pumpkin into quarters, remove and discard the seeds and slice off the skin. Cut into chunks and place in a roasting tin or airfryer.
Chop the onion, finely slice the celery, add them to the tin, along with the garlic cloves, (whole, still in their skins).
Add the oil, rosemary, chilli flakes and smoked paprika, season well with salt and black pepper, then toss everything together until the vegetables are fully coated.
Roast for 30 minutes or until the pumpkin is just soft. I do this all in my airfryer 180 degrees.
Find the garlic cloves, cut off their ends and squeeze the soft flesh back into the roasting tin, discarding the skins and rosemary stalk.
Tip the contents into a blender or a saucepan.
Add the stock & tomato purée and blitz until completely smooth. Taste and adjust seasoning as required.
Add toasted pumpkin seeds.
