If you want a very convenient soup use frozen chopped veggies , no prep required. Here’s how I made my cauliflower soup
Heat a deep pot , spray with oil add in approximately 150g frozen onion , after a minute add the garlic I used a teaspoon , next the potatoes (approximately 250g) , cauliflower (1kg bag) and stock, I used 1 litre of boiled water added 2 stock pots one herby one plain veggie , I added a heaped teaspoon of thyme and rosemary with a large pinch of salt and pepper . Once stock is added , stir , add the lid & cook away for 35 minutes . Blitz till smooth voila . Your soup may take shorter time to cook depending on the potatoes.
Please do not blend immediately and do not put it in the food processor piping hot let it cool a bit first , to prevent pressure build up from the steam which can cause the lid to pop and maybe hot liquid sprayed on you . Be careful ❗️
