Chicken and vegetable soup . A lovely high protein and high fibre soup that is perfect for all the family and perfect for your weightloss plan . Over 27g of protein per portion

Can serve up to 4 portions when blended - 3 portions not blended

1 pkt diced soup vegetables
300g of potato
300g of chopped chicken breast
1.2 litres of vegetable or chicken stock
1 teaspoon of curry powder , optional
A good pinch of salt and pepper

This was always on my mind when I thought about losing weight “where does it go”? Not to get to scientific , I’ve tried to explain it a bit so that it’s more understandable, hopefully I have 😂😂. There really is a lot more to fat loss but this question was one I often thought about until I learned about the actually fat loss process

If you want a very convenient soup use frozen chopped veggies , no prep required. Here’s how I made my cauliflower soup

Heat a deep pot , spray with oil add in approximately 150g frozen onion , after a minute add the garlic I used a teaspoon , next the potatoes (approximately 250g) , cauliflower (1kg bag) and stock, I used 1 litre of boiled water added 2 stock pots one herby one plain veggie , I added a heaped teaspoon of thyme and rosemary with a large pinch of salt and pepper . Once stock is added , stir , add the lid & cook away for 35 minutes . Blitz till smooth voila . Your soup may take shorter time to cook depending on the potatoes.

Please do not blend immediately and do not put it in the food processor piping hot let it cool a bit first , to prevent pressure build up from the steam which can cause the lid to pop and maybe hot liquid sprayed on you . Be careful ❗️

Chilli chicken and new potatoes one pan wonder.. a very well balanced dish with high fibre

serves 3 generous portions I serve mine with broccoli 🥦

You need a deep pan for this

Ingredients
400g chicken breast diced
500g new potatoes quartered
100g of peas frozen or tinned
1 large onion chopped
3 garlic cloves chopped
1 red or green chilli 🌶 finely chopped
1 tin tomatoes
1tablespoon tomato puree
1 teaspoon thyme
1 teaspoon oregano
1/2 tsp Tumeric
1 tablespoon paprika
1/2 teaspoon cayenne chilli pepper
1 chicken stock cube
300ml water
1tablespoon oil
Good pinch of sea salt

Method
Heat your oil and fry off your chilli and garlic after a minute add the onion and all the herbs and spices.. Stir in a few tablespoon of water and after a few minutes add your chicken, remaining water and salt plus the stock cube. Fry the chicken for 2 minutes each side, add the Tinned tomatoes and tomatoe puree and give a good stir. Add In the potatoes and turn down the heat to a simmer . Place a lid on top and let it simmer for 1 hour checking a few times.. You may need more water.. Keep checking just incase . 5 minutes before cooking time is up add in the peas and let it sit for the remainder of time

How was your weekend? What did you get up to

My weekend has consisted off beautiful walks , catching up with my daughter /granddaughter and enjoying tasty coffee ☕️ . It’s the simple things in life that bring content.

My Sunday evening will be spent getting ready for the week ahead in the kitchen with the music blasting whilst getting my food prep done for another on track week 💪💪

Lean alternative to scotch eggs

Makes 2

Ingredients
200g turkey mince
30g breadcrumb. I used Sainsburys own brand bread . Cals will differ if using different breads
3 eggs, 2 boiled and cooled, 1 beaten for egg washing
1 spring onion or half a small leek or very finely chopped chives
1 level teaspoon of mixed herbs or thyme (save a bit and put it in the breadcrmbs)
Half teaspoon of chilli flakes optional
Spray oil

Method

Mix the herbs , chilli and onion choice with the turkey mince. Dont over mix . Half the mixture and roll into balls then flaten this downbto a pattie form . Place the boiled egg in the centre and fold round the meat , make sure its secure all round. Dip in to the egg white , covering the whole thing then dip into breadcrumb mix .

For the oven if you’ve no air fryer Pop in them at 200 degrees for 35/40 mins
