What a week it’s been in my Slimming World groups… and I am absolutely buzzing for every single one of you! 🎉

This week we celebrated an incredible range of awards – from members achieving their ½ stone award all the way up to an amazing 8 stone award! 🤩 That’s not just weight lost… that’s confidence gained, habits changed and lives being transformed.

We also had someone reach their personal achievement target this week too, which is such a special moment. Setting a goal, staying committed and finally hitting it is just the best feeling and I couldn’t be prouder! 🥰

Every award, big or small, deserves to be celebrated because each one represents hard work, determination and showing up for yourself week after week.

What a week… I’m so proud of you all! ❤️

Quick trip into Food Warehouse today to pick up a few bits to help me with a few SP days on the Slimming World plan 💪🥦

For anyone who hasn’t tried it yet, SP days (Speed & Protein) are a great way to give your weight loss a little boost by filling up on loads of speed foods and lean protein. Perfect when you want to refocus and get the scales moving in the right direction again!

Love a dinner that feels a little bit fancy but still totally on plan 😍

Tonight I couldn’t wait to try the new Slimming World dauphinoise potatoes and oh my goodness… they did NOT disappoint 🙌 Absolutely fab! Creamy, comforting and the perfect side without all the usual guilt.

I had mine alongside a beautiful medium rare steak 🥩, a salad for that Speed boost 🥗 and some peppercorn sauce to finish it off.

Oh I am GOOD to myself 😂✨

How good is this for a Slimmer of the Week surprise 😍

One of my lovely Slimming World members popped a tin of pease pudding into the basket this week… and I have to confess 🙈 I have NEVER EVER tried it!!

I don’t even know how I’ve managed that 🤣

So now I need your help…

Did you know it’s National Pie week 🥧

🥧Recipe of the Week 🥧

Beef and mushroom pies

Comfort food calling! Rich beef, chunky veg and creamy cannellini beans simmer low and slow for the ultimate cosy-day feast.

All of our recipes are healthy, delicious and can be easily adapted to suit any need or preference. This recipe has been specially selected as part of our partnership with Diabetes UK.

🥧Ingredients 🥧

⭐️1 onion, finely sliced
⭐️3 celery sticks, finely sliced
⭐️300g chestnut mushrooms, quartered
⭐️3 carrots, peeled and sliced into 2cm rounds
⭐️3-4 sprigs of fresh thyme
⭐️3 garlic cloves, crushed
⭐️400g lean stewing beef, visible fat removed, chopped into 2cm chunks
⭐️1 litre low-salt beef stock
⭐️1 tbsp Worcestershire sauce
⭐️2 x 400g cans cannellini beans, drained and rinsed
⭐️150g reduced-fat puff pastry
⭐️1 egg yolk, beaten
⭐️500g spring greens, shredded, to serve

🤩Method 🤩

⭐️Preheat your oven to 160°C/fan 140°C/gas 3. Put all the ingredients except the beans, pastry, egg yolk and spring greens in a large, flameproof casserole dish and season with pepper. Bring to a simmer on the hob, then cover and cook in the oven for 2 hours.

⭐️Remove the lid. Stir well and return to the oven, uncovered, for a further 1 hour 30 minutes, adding the beans for the last 20 minutes.

⭐️While that’s happening, stamp out 12 mushroom shapes (weighing no more than 12.5g each) from the pastry, or slice the pastry into 6 x 25g squares. Line a large baking tray with baking paper and lay the pastry shapes on top. Brush with the beaten egg and chill until needed.

⭐️Remove the casserole dish from the oven, cover and place over your lowest heat on the hob to keep warm. Increase the oven to 220°C/fan 200°C/gas 7 and bake the pastry for 20-25 minutes until puffed and golden. When the pastry’s almost ready, steam the spring greens for 2-3 minutes.

⭐️Divide the beef mixture between 6 bowls, discarding the thyme sprigs, then add 2 mushroom pastry shapes (or 1 pastry square) to each. Serve with the spring greens.

Who knew I’d still be learning new things thanks to my amazing Slimming World members?! 😍

One of my lovely members was telling me all about golden kiwis… and I’ll be honest, I didn’t even know they existed! 🙈 Of course I had to go on the hunt and managed to grab some in Lidl – and WOW.

They are so much sweeter and softer than the green ones, less tangy and just absolutely delicious! 🥝✨ I am officially a HUGE fan.

Proof that group isn’t just about support and motivation… it’s also where I get all the best food tips and ideas every single week ❤️

If you’re looking for a delicious Healthy Extra option… this one is a winner 🍞✨

I’ve been trying Jason's Sourdough bread as my Slimming World Healthy Extra fibre choice and I have to admit… I’m a fan 🙌

Yes, you only get one slice – but oh my goodness it is worth it 😍 Thick, satisfying, full of flavour and feels like a proper treat alongside your meals. Perfect with eggs, topped with smashed avocado, or simply as toast with your favourite free toppings.

One of the things I love most about group each week is how many ideas I pick up from my members 💡 You are all constantly inspiring me to try new things and think outside the box – and this was definitely one of those recommendations!
