Not one… but TWO tubs of my absolute favourite cheese spread handed to me this morning by the lovely Mhairi 🧀😍 and then she casually says…

“Can you bring that along for the raffle at my Deans Slimming World group?”

Now listen… I absolutely ADORE her Deans group ❤️ the members are incredible and I love supporting them whenever I can…

BUT I have loved cheese for a lot longer than I’ve loved that group 🤣🤣

So here I am. I’ve arrived. With the cheese.

The big question is… will the cheese actually make it into the raffle… or will it mysteriously find its way back home with me? 🤔😂

This was an absolute WINNER 😍🔥

My Slimming World Kitchen sizzling steak stir fry and oh my goodness… it was INCREDIBLE 🤤🥢 Packed full of flavour, loads of speed veg and the steak was so tender. The best part? The whole family loved it too 🙌

There’s nothing better than a meal that’s completely on plan but still feels like a proper fakeaway treat 💫

And can we just talk about rice… I am definitely more of a rice fan these days 🍚😂 It just soaks up all those gorgeous flavours and keeps me fuller for longer – total game changer!

Happy Pancake Tuesday 🥞✨

Of course I wasn’t missing out!! These are Slimming World pancakes that I had for breakfast this morning and they were SO good 😍

It helps me keep on track while still feeling like a proper treat. That’s what I love most – never feeling deprived, just making smart swaps ❤️

Served with loads of fresh fruit 🍓🫐 and a yogurt for extra protein to keep me fuller for longer. You really can enjoy days like today and still smash your goals 💪

🤩Recipe of the Week 🤩

🥞Air fryer pancakes🥞

The worktop wonder makes light work of these scrummy low- swip pancakes. What would you serve your pancakes with?

🤩Ingredients 🤩

⭐️60g plain flour
⭐️75ml skimmed milk
⭐️3 large eggs

🤩Method 🤩

⭐️Put the flour, milk and 25ml water in a bowl or jug along with the eggs. Whisk until smooth and lump-free, then season with a little salt and put in the fridge to rest for half an hour.

⭐️Preheat your air fryer to 200°C. Ladle one-sixth of the mixture into 1 of the holes of a silicone pancake mould and repeat to fill the holes (we could cook 3 pancakes at a time in ours) and cook in the air fryer for 3 minutes. Loosen the edges with a spatula and flip the pancakes over, then cook for another 2 minutes.

⭐️Once cooked, slide the pancakes onto a plate and keep warm while you cook the rest. Serve with your favourite toppings – we gave ours a cherry Bakewell twist, with a handful of defrosted frozen cherries, a dollop of fat-free natural yogurt and 1 level tbsp flaked almonds (this adds 4½ swips).

My Slimming World roasted red pepper houmous 🌶️

Full of protein, super satisfying and perfect for dipping all the speed free veggie crudités 🥕🥒🫑 And the best part? It’s completely FREE 🙌

I love that you can mix up the flavours too – garlic, chilli, lemon, smoked paprika… whatever you fancy! It’s such a versatile little snack to have ready in the fridge.

Top tip 💡 I pop mine into individual tubs and freeze them. That way I can just grab one out when I need it and there’s no waste. Perfect for lunches, snack boxes or when you fancy a nibble 🤭

❤️Recipe of the Week ❤️

🍓Strawberry tarts🍓

The way to the heart is definitely through the stomach with this sweet strawberry tarts recipe. With just four ingredients, these perfect pastry puds are a dream to make – and at only 4½ Swips per strawberry tart they’re a slim-friendly way to show yourself some love!

❤️Ingredients❤️

⭐️100g ready-rolled reduced-fat puff pastry
⭐️8 tsp fat-free natural fromage frais
⭐️8 small fresh strawberries, hulled and thinly sliced
⭐️½ level tsp icing sugar

❤️Method ❤️

⭐️Preheat your oven to 220°C/fan 200°C/gas 7.
⭐️Cut out 4 hearts measuring about 8cm x 8cm from the pastry using a heart-shape cutter (or use a template made from card). Using a sharp knife, score a 0.25cm border around the edges, taking care not to cut all the way through the pastry.
⭐️Put the pastry hearts on a baking tray lined with non-stick baking paper and bake for 10-12 minutes or until risen and golden. Leave to cool.
⭐️Press down the middle of each piece of pastry to create heart-shaped nests. Spoon the fromage frais into each tartlet, top with the strawberries and evenly dust with icing sugar to serve.

4½ Swips per serving
30 minutes plus 15 minutes cooling
Serves 4

Curry night is always a winner in our house 🍛😍

Used the Slimming World tikka masala sauce but gave it a wee blitz because apparently veg in curry is a crime in this household 😂
Added some fat free Greek-style coconut yogurt too to calm it down a bit for the non-spice lovers 😐

And let’s be honest… the garlic & coriander naans steal the show every single time 🤤 Everyone happy, plates cleared, zero complaints – I’ll take that 🙌
