Keeping connected in the coffee world has a different feel to it in 2020. That connection be through the value stream, or sometimes with peers closer to home.

It was such a pleasure to be involved in an impromptu, unofficial UK roasting competition over the last few weeks. All the roasts were absolutely delicious. To see how people could create such diversity of flavour from one coffee was a reminder that roasting takes time to integrate science and skill harmoniously.

This weeks focus has been mostly concentrated on 5.1Kg of green coffee.

Actually it’s the 100g that’s drawn most attention to date, of an unknown origin, unknown variety and unknown post-harvest processing.

To be fair we have had a little extra information to help us, including price/Kg, moisture content, Water activity reading and bulk density. When I say we.. I am not alone.

This Friday 13th, 20 roasters from across the UK will roast the 5Kg of this coffee. Before they do so they will have submitted a comprehensive roast plan and assessment of the green coffees provenance.

The assessment would have been based on sample roasting the extra 100g, then determining a roasting philosophy, a detailed roast plan including times salient information such as charge, drop and development time.

1Kg will be submitted to a panel of some of our most revered UK coffee professionals along with the recorded roast profile data. The submissions will be coded and assessed blind with a number of sensory cup quality criteria worth 100 points ie, sweetness acidity, bitterness, balance etc.

100 points for green assessment and roast plan.

100 points for sensory assessment.

200 points TOTAL

The result will be announced on Friday 27th November and we’ll plan an insta live session with the winner.

The declaration by the WHO of Covid-19 (Coronavirus) a global pandemic moves us into unprecedented times. Across the global coffee community each of us will have different systems and rules to follow according to our own country’s actions. We wish you all well through this period, whatever the situation in your country, and as valued customers please see below for a summary of our updated work plan as of 17th March:

• We have postponed all training and SCA courses at Coffee Nexus and these will be rescheduled when the wider situation becomes clearer

• Off-site consultancy is postponed until the end of April 2020 at which point a further review will take place

• The lab team are moving onto shift-based work to minimise contact

• We continue to run all of our offered analytical, grading and sensory tests on this shift basis. This may mean we request larger sample for assessment based on the need for more duplication

• All hard surfaces are frequently sanitised, in particular between client testing jobs, and the team will increase hand washing throughout the working day

• Any team member with symptoms will be self-isolating immediately

ACE, in partnership with Asociación de Cafés Especiales del Ecuador (ACEDE), is extremely proud to announce the official launch of a 2020 pilot program with Ecuador!⁠

ACEDE has indicated the 1st competition will be held in the city of Guayaquil. Plans are for the Cup of Excellence to run a full program with its internet auction platform for 2021.⁠

Overview:
Coffee Nexus is a respected Edinburgh based coffee consultancy with a range of clients across the whole value stream of the coffee industry.
This coffee lab technician’s job is offered on a part time role with flexible hours available. Its main role is to support the quality control work of the consultancy by organising sample analysis, sensory sessions and client sampling. The position would suit someone with experience of food laboratory or coffee quality assurance.

Job Outline and Objectives:
The role will report directly to the lead consultant and will include a range of functions including, and not limited to:
• Setting up coffee sensory sessions
• Assessing a range of coffee qualities in cupping and other sensory sessions
• Use of technical coffee equipment for physical analysis of green and roasted coffee
• Recording and organising sensory, quality and roasting data.
• Recording and managing coffee brewed extraction data
• Roasting green coffee samples on a range of coffee roasters to specific roast profiles, both with Cropster roast profiling software and manually
• Work on ongoing R/D projects associated with new products/processes as assigned
• Managing postage of samples to clients
• Maintaining a clean environment

Core Skills:
We are looking for the following core skill set
• An ability to work confidentially
• Exceptional attention to detail
• A desire and ability to produce consistently high-quality work, efficiently
• Self-motivated and able to work independently
• Good organisational and communication skills
• A desire to increase your knowledge of coffee

Core Qualifications:
We are looking for the following core qualifications as part of this application:
• Proof of the right to work in the UK
• Previous experience of work-related food or beverage tasting or previous experience in a coffee quality lab
• Proficiency in English: reading, writing and speaking
• Proficiency in Microsoft office packaging including excel, word and outlook

Supporting Qualifications
Additional qualifications that may support the application include:
• Food science degree
• SCA sensory, green coffee or roasting certificates
• Current Q Arabica or Q Robusta licence
• Experience with Cropster roasting software

Hours and Benefits Overview:
• Initially 20 hours per week
• Competitive salary
