Homemade soup is a sure way of getting all the those vegetables and fruit crammed in to one simple meal. I make a big batch which lasts for most of the week and often tweak with some different herbs or spices after a couple of days.
I believe it is an excellent way of using up the odd pieces left in the fridge and with a little imagination make it taste delicious.
