It’s a wonderful irony that the acronym for Myalgic Encephalomyelitis is ME. Because through ME I discovered the purer me. I discovered who Susie is. This is how I came up with the name 'Susie Who'. The ill me, not knowing who I was, becoming the healthy, happy, new, purer me that I am today. Everything we eat, drink, think, put on our skin – it all goes to make up who we are. 🍂 Hearty Red Lentil Soup
Perfect for a chilly autumn day — nourishing, simple, and full of natural goodness.

You’ll need:
🧅 1 onion
🧄 2 cloves garlic
🍅 1 can chopped tomatoes
🌾 300g washed red lentils
🌿 1 dessertspoon mixed herbs
🧂 Salt + pepper
💧 500ml water
🥣 1 vegetable stock cube

How to:
Sauté onion and garlic till soft.
Add everything else.
Bring to the boil, then simmer for 30 mins until creamy and rich.
