👻🎃Spooky butternut squash soup🎃👻
A pumpkin shell filled with scrumptious soup is a guaranteed Halloween show-stopper. Just scoop out the flesh and you’re ready to go – or get the kids to help for some goo-ey, eww-ey fun! Keep the flesh in the fridge, ready to make our fab pumpkin curry (just search ‘quick pumpkin curry’ in Recipes on your lifeline online)

🎃🎃🎃🎃🎃🎃Ingredients🎃🎃🎃🎃🎃🎃
🎃Low-calorie cooking spray
🎃1 onion, diced
🎃1 medium butternut squash, peeled, deseeded and cut into wedges
🎃1 small potato, peeled and quartered
🎃2 garlic cloves, peeled and crushed
🎃900ml hot vegetable stock
🎃Fat-free natural fromage frais, to serve
🎃Red and green chilli slices, to serve
🤩🤩🤩🤩🤩Method 🤩🤩🤩🤩🤩
🎃Spray a large non-stick pan with low-calorie cooking spray and place over a low heat. Add the onion and cook for 1-2 minutes, stirring occasionally.
🎃Increase the heat to medium, add the butternut squash and potato and cook for 2 minutes. Add the garlic and season lightly. Pour in the stock and simmer for 25 minutes, or until everything is tender and cooked through.
🎃Using a hand blender or food processor, blend the mixture until smooth. Transfer the soup to a hollowed-out pumpkin (or a large serving bowl!) and top with a swirl of fromage frais and the sliced chillies.
