Stability gives your body a solid base of support to produce movement from.

The more stability you have within the joints (Ankles, Knees, Hips) -

*The more you reduce your chance of getting injured
*The better you can change direction/execute movements
*The better you're able to maintain body control/balance

Take ankle stability/strength for example : The foot/ankle is the 1st point of contact to the floor, meaning this part of your body absolutely needs to be stable/strong and able to hold up at the point of contact. If you have any weakness within the ankle/foot complex, then your movements will be weak and inefficient.
