I love Saurkraut and always have some home made in the fridge and another fermenting in the cupboard.
It’s so good for your gut microbiome which is important for good health.
Those little microbes;
• aid digestion and metabolism
• support and regulate the immune system
• influence mood and brain function supporting mental health
• synthesise B vitamins and vitamin K
• imbalances are linked to chronic diseases such as diabetes, obesity, allergies, heart disease and neurodegenerative diseases like Parkinson’s and Alzheimer’s.
I was very unwell in December and required triple therapy antibiotics. This medication can be life saving but it doesn’t discriminate between the pathogenic bugs and the good guys. So I’m making sure I get plenty of fermented foods to build my microbiome back to health. Lots of Saurkraut, live yogurt, miso, kimchi and plenty of fibre from fruit, veggies, whole grains, wholegrain sourdough, to keep the microbes well fed.
Making Saurkraut is easy - cabbage and salt that’s it. The secret to it being successful is packing as tightly as you can in to a jar with very little space at the top and sealed well, eliminating oxygen is super important.
