A wee Friday recipe for you. Stay safe and avoid all that wind and rain!
Marry Me Butter Beans!! You have probably seen marry me chicken recipes all over the internet, but this is a high fibre meat free alternative and it is my absolute favourite way to cook beans and is ready in just 10 minutes.
This serves 2 people and is 421 calories, 22g protein and 23g fibre a portion.
I cooked a few chopped mushrooms in a little olive oil and then added a jar of butter beans (jars are SO much better than the canned ones) in their liquid, about 150ml veggie stock and then 5 chopped sundried tomatoes. Heated that for 5 minutes and then stirred in 4 tbsp light cream cheese and some chopped spinach and heated until the cheese melted.
Served with tenderstem broccoli and green beans.
