Creamy Coconut Chickpea Curry AKA your emotional support for day one of your period π«Ά
Ingredients:
π 1 onion
π 2 garlic cloves
π Thumb-sized piece of ginger
π 2 x chopped sweet potato
π 1 tin of chickpeas
π Handful of spinach
π 1 tin coconut milk
π 1 tsp ground cumin
π 1 tsp ground coriander
π 1 tsp curry powder
π 1 tsp garam masala
π 1 tsp tumeric
π 2 tbsp olive oil
Method:
1. Chop the sweet potatoes, drizzle with oil, and bake on a tray for about 30 minutes, or until soft.
2. While they cook, heat 1 tbsp of olive oil in a pan and stir in the spices.
3. Finely chop the onion, garlic, and ginger, then add them to the pan with the spiced oil. Cook until softened.
4. Add the chickpeas, along with a splash of water if needed.
5. Pour in the coconut milk and let the mixture simmer.
6. Once everything is nearly cooked, add the roasted sweet potatoes and let it all simmer for another 5 minutes.
7. Finish by stirring in the spinach until just wilted.
