Mushroom foraging! 🍄‍🟫🧺 The walk I would take often as a child this time of year. It was one of my favourite activities! And this basket full of treasure is what my parents found after foraging at first light last Sunday. All dried and ready for winter cooking, too!

I have been fortunate to live and experience mushroom picking growing up right on our doorstep, and also been able to take my daughter to experience it too. What a memorable opportunity to learn about nature and all it has to offer, turning a walk into an exciting activity searching for mushrooms. Not to mention enjoying delicious cooked meals after using foraged ingredients.

🍄‍🟫Wild mushrooms are a great source of protein (offering all essential amino acids), prebiotics, vitamins, and minerals such as B vitamins, Vitamin C, potassium, selenium, zinc and the light exposure also makes them good source of Vitamin D! ☀️

⚠️ Foraging and consuming wild mushrooms can be dangerous without proper knowledge and experience, so one needs to be 100% certain of a plant mushroom before consuming it. Each time we went with my parents, who are experienced in identifying edible and poisonous mushrooms in the area, they taught us how to dry and store them too.

🍂Hello autumn 🍁

First day of autumn, and we are pumpkin-ready! 🎃These are Hokkaido pumpkins from my mum’s garden, which are usually ready to harvest late summer, early autumn. 🍂

🎃Full of nutrients such as beta-carotene, vitamin C, fibre, potassium, and magnesium, they are not only a traditional display of the fall, but are also great for cooking! 👨‍🍳

They can be enjoyed in many ways, such as added to soups, salads, stews, curries, pasta sauces, eaten roasted, or as a healthier alternative to mashed potatoes, etc.

✨Summer 2025 recap ✨

From longer days, warm sunny weather, more times spent outdoors, day trips, family time, seasonal fruits/vegetables from mum’s garden, beautiful summer flowers, and a visit to the local farmers market, we have made the most of the summer and captured some lovely memories. 💖 Looking forward to what the next few months of this year will bring! 💫

✨Blackberry and raspberry loaf cake! ✨

Not a sugar-free or gluten-free, etc., so this one is definately an occasional treat. We have made it for the whole family as a treat to end our summer holidays and to use up the blackberries we still have in the garden.

☝️I have tweaked the original recipe we had and added some spelt and wholegrain flour instead of just using plain flour. I have also halved the sugar content and scattered some extra blackberries, as well as some raspberries we had in the freezer, to make the cake a little healthier!

🍵I had mine with a lemon balm tea, made with freshly picked lemon balm leaves from the garden and also after a protein rich meal.

💡One of my rules is to have carbs (in this case, a cake!) with a source of protein or fat to reduce a glucose spike or to consume it after a protein-rich meal rather than in isolation. I had mine after lunch; otherwise, I could have enjoyed it with a full-fat unsweetened Greek yogurt like my mum did. 😊

The recipe I have used:

Ingredients:

1 cup plain flour
1/2 cup spelt flour
1/2 cup whole grain flour
½ cup caster sugar
2 eggs
1 cup of milk (I have used full-fat unsweetened oat milk)
1 ½ tsp vanilla extract
1 tbsp baking powder
½ cup canola oil
2 cups fresh blackberries
1 cup fresh raspberries

Method:

Preheat oven to 180 °C. Grease and line a baking tray with parchment paper.

In a medium bowl, combine the baking powder and all flours together and set aside. In a separate, larger bowl, whisk together the sugar, eggs, and vanilla extract for about 3-4 minutes or until the mixture becomes light, smooth, and fluffy. Gradually add oil to the mixture, then slowly add milk and the flour mixture, whisking gently (be careful not to overmix), until fully combined.

Pour the cake batter onto a baking tray, scatter blackberries and raspberries on the top, and bake for 30-40 minutes or until a toothpick inserted comes out clean.

Let it cool before serving.

✨Take care of your skin. ✨

The skin is our largest organ and the body’s first line of defence against pathogens, toxins, UV light, etc. It also regulates body temperature, among other functions. It is also our most visible organ! And if you look after your body from the inside, it will show on the outside!

Glowing skin is healthy and hydrated skin, and diet and lifestyle play a major role in its condition. Excess intake of sugar, processed food, alcohol, caffeine, prolonged sun exposure, smoking, etc., can, over time, take its toll and result in dehydrated skin, clogged pores, or worsening skin conditions.

A balanced, varied, and nutritionally rich diet is essential for optimal skin health, and my favourite foods for radiant skin include:

🫐 Berries – berries are rich in antioxidants. Antioxidants help fight free radicals that can negatively affect the skin and accelerate the natural aging process.

🥑 Healthy fats – such as those found in nuts and seeds, avocado, olive oil, etc., help nourish the skin, promote skin hydration, and maintain skin moisture levels.

🍣 Omega 3 – found in salmon, mackerel, walnuts, chia seeds, etc., help maintain skin barrier function and reduce inflammation.

🍋 Vitamin C- rich foods – such as citrus fruits, broccoli, spinach, bell peppers, tomatoes, strawberries, etc. help boost collagen production.
