Honey Roast Carrots

These have become a bit of a favourite with a Sunday roast! I served them alongside long stem broccoli, peas, and garlicky greens. And Yorkshire pud and roast potatoes of course! All the veg!

I don’t really measure this, so here is an approximate recipe..

Ingredients:
🥕500g Carrots (can also use other root veg) Baby carrots work well zoo.
🥕Drizzle Sunflower/rapeseed/olive oil
🥕1-2 tbsp White wine vinegar
🥕1-2 tbsp runny Honey
🥕Salt and pepper

Method
🥕Heat oven to 190C.
🥕Peel or scrub carrots and slice in half if large.
🥕Place in roasting dish, drizzle with oil and salt and pepper and shake around so that they are fully coated.
🥕Roast for about 30 mins.
🥕Take out of the oven, pour over the white wine vinegar and honey, and toss again to combine and coat.
🥕Roast for another 20 mins.
🥕Serve

Pea and Basil Soup.

Recipe also on blog, but this is THE quickest and easiest soup ever. Delicious and fresh.

Ingredients:
450g frozen peas
500ml vegetable stock
Small bunch of fresh basil (you can also add mint as well or instead) .

Method:
🍵In a large saucepan, cook the peas in the stock until tender.
🍵Roughly chop the herbs and stir into the peas.
🍵Blend well in blender or with hand mixer, and season with salt and pepper to taste..

* A sprinkle of Parmesan is sometimes nice to serve with.
* If you like a thinner soup, add a little more water.

Chicken Teriyaki Skewers

Delicious, light and fresh dish. Once you have done the prep, you just throw it all together!
Serves 2

Ingredients
• 4 tbsp light soy sauce
• 2 cloves of garlic
• 4cm ginger, finely chopped
• 4 tsp honey
• 2 x large chicken breasts, sliced into 1 cm strips
• 1/2 cucumber sliced into thin half moons.
• 10 radishes, sliced
• 30g pine nuts
• Large handful of baby spinach leaves
• Salt and pepper
• 1tbsp rice wine vinegar or white wine vinegar
• 4tsp toasted sesame oil
• White sesame seeds to serve
Brown (or white) rice to serve.
4 wooden skewers (soaked in water)

Method • Pour soy sauce, garlic, ginger and honey into a bowl and mix. • Mix in the chicken making sure it is all coated. Leave to marinate for 15-30 mins.
• Prepare all your salad ingredients. • Thread the chicken onto the skewers, but don’t compress the meat too much.
Place on grill pan and grill for around 7 - 10 mins or until cooked though, turning halfway.
• While the chicken is cooking, put the cucumber, radishes, pine nuts and spinach into a bowl with a pinch of salt and pepper. Pour over the rice wine banshee and sesame oil and toss together.
• Divide the salad between 2 plates, and top each with 2 skewers and a sprinkle of sesame seeds and serve with some brown or white rice.

Mushroom Soup

I made this to use up some mushrooms that were starting to look a little sad. It’s easy and quick.
I made this one dairy and gluten free, but you can use regular ingredients.

Ingredients
• 30-40g butter, or a lug of oil
• 2 medium onions, diced.
• 1-2 cloves of garlic, crushed.
• 500g mushrooms (approx) diced
• 1 bay leaf
• 2 tblsp plain flour (or gluten free, or corn flour)
• 1 litre chicken stock
• 3-4 tbsp cream - I use Alpro single cream alternative.

Method
• heat oil/butter in a large pan, and add the onions and garlic. Cook gently until softened.
• turn up the heat and add the mushrooms, stirring frequently for around 3-5 mins.
• sprinkle over the flour and stir in, then add the stock, stir and bring to the boil, then simmer for around 10 mins. • blend well (i just used a hand blender) • season and bring back up to temperature, then stirthrough the cream.
• serve

Routine
There is no right way to go about your daily life in the current circumstances. Whether you are working from home, trying to home school or entertain children or adapting to staying at home and having no plans, here are a few tips to help keep structure to your day and help maintain a positive mindset.😊 *
⏰ Wake up at around the same time each day.
🛏 Make your bed.
🛁 Shower and get dresssed
🍽 Meals - stick to proper meals, with a couple of snacks. Try to plan ahead to avoid endless picking, then being unsatisfied, or feeling guilty.
👖 Clothes - get dressed in clothes and avoid staying in your dressing gown, trackies etc as tempting as it may be!
🗓 Don’t treat weekdays like endless weekends.
🚶‍♀️🤸‍♀️🏃Movement and exercise - so important physically and mentally. You don’t need to be doing a Hiit workout , but walk, run, do a home workout, yoga. Try to get some exercise in each day and try to get some fresh air air.
🥘🥧 Cooking - cook some nutritious, even if they are simple, meals. Bake something if you have the ingredients sand the time- I find it therapeutic😊.
💻Working from home - set up for work, take regular breaks throughout the day. If you can, create a workspace away from distractions and the tv. Tidy away your laptop and work at the end of the day. .
📞💻Keep in touch - keep intouch with friends and family everyday - facetime, Whatsapp, zoom, house party - there are so many ways. .
📚 📦 🎧 Take the opportunity to learn something new, study, read, listen to podcasts, paint, garden, sort those boxes under the bed that you have been meaning to go though. If you have children, be creative with them and get them to help. Painting, maps, hideand seek, reading.
☕️🛋Relax - easier said than done, but we are so used to being busy and there is so much pressure to be productive and on top of everything 24/7, take this opportunity to slow down when you can, don’t compare yourself to others and don’t feel guilty about taking time to slow it down.

Leek and Potato soup
Minimal ingredients and minimal effort!
Serves 6

- 50g butter or dairy free spread, or a good lug of light oil - 1 onion, chopped
- 450g leeks, washed and sliced.
- 2 potatoes, peeled and chopped into cubes.
- 1L vegetable or chicken stock
Seasoning
- 2-3 tablespoon cream (optional)

• Melt the butter in a large pan, sauté the onion and leeks gently until soft.
• Add the potatoes.
• cover and cook gently for a few minutes.
• Stir in stock and season.
• Cover and bring to the boil, then turn down to gentle heat for 20 - 30 mins until veg is cooked through.
• using a hand blender, do a few pulses so that soup is blended but there is still some texture and whole pieces of veg.
• check seasoning and swirl though cream to serve (if using)

I spent the last weekend doing my 2 day official Spinning course (and I passed!)
It was intense, with a lot of theory, science and 5 spin sessions..🥵🥵 but it was great!! Looking forward to a day off the bike today though!! but then getting started with some sessions in the next few weeks.

Dinner inspiration - Vegetable stir-fry with egg-fried rice.

Friday baking inspiration....Oreo Chocolate Brownies...😍
I don’t think I need to say much about these..!

INGREDIENTS:
165g butter
200g dark chocolate
3 eggs
2 egg yolks
2 tsp vanilla extract
165g soft light brown sugar
2tbsp plain flour
1tbsp cocoa powder
Pinch of salt
154g pack Oreo biscuits broken into quarters

METHOD: •Preheat oven to 180C/350F/Gas6
•Grease 20cm baking tin and lime with baking paper.
•Melt butter in pan over medium heat, when melted remove from heat and add grated chocolate. Leave to stand for a few minutes until chocolate softens and then mix together.
•Whisk eggs, egg yolks and vanilla I large bowl until light and fluffy.
•Add sugar in 2 additions to the side of the bowl (to keep the air)
•Whisk together until light as fluffy, then pour in chocolate, again around the sides. •Add flour, cocoa powder, salt ad a third of the Oreos and stir until combined.
•Pour into tin, press the remaining Oreos on top and press them in slightly.
• Bake for 25-30 mins - the middle should be slightly gooey.
• Leave the brownies to cool in the tin (the top will crack a little), then cut into squares.

Enjoy cold, warm, on their own or with ice cream! 😋

Easy Nutritious Food!

Made up giant omelette/frittata to share with peppers, mushroom, chorizo, spinach, cherry tomatoes and cheddar.

Ok, not the prettiest, but certainly ;
