Pancakes *aren’t* just for Pancake Day in our house.
They’re actually one of the easiest ways I know to make breakfast work for fertility, for growing brains, and for busy mornings AND they are so versatile.
We batch cook them twice or 3 times a week to make our life easier but the real reassurance for me comes from the simple ingredients.
We go for a high egg to flour ratio. To make them more nutritious but you can play around with this and adapt it to taste.
The reason for this is that eggs are great for fertility, brain health, cellular health and are high in protein and healthy fats so great to keep energy and blood sugar stable.
This is also the only way one of my children would consume eggs.
And speaking of hiding, we hide/blend with the mixture:
- fruit like banana, cooked apples or frozen berries.
- vegetable like grated carrots, courgettes, spinach (you may have to adjust the liquid ratio)
- prebiotic fibre like raw cacao, PHGG and berries
- Collagen or protein powders.
The topping options are also endless. If you pair a pancake or two with Greek yoghurt and a drizzle of nut/tahini butter, you’ve got the perfect start to your day, with something simple that works hard in the background.
