Summer Solstice Jam Blessings !
Its become a bit of a ritual in the last few years for me to make a batch of jam or jelly on or arond the Solstices and Equinoxes, using the best of whts growing, blooming or fruiting in my varden. So here is my latest one for this super potent Summer Solstice period....Blackcurrant & Rose Petal jam.
I used 1lb of fresh Blackcurrants, simmered in 1 pint of water, took of heat, mashed Blackcurrantz then strai ed through a muslin bag, added petals of 4 Roses (the old Apothecary ones are perfect, i used a variety of Rosa gallica), whizzed them into the hot jammy liquid with a wand thingy ( i couldnt bring myself to just infuse then remive them ), put back on heat with 1.5 cups of sugar
, boiled until setting point then bottled them up.
Its sooo delicious and i look forward to gifting a couple to loved ones.

Its become a bit of a ritual in the last few years for me to make a batch of Jam or Jelly on or around the Solstices and Equinoxes, using the best of whats growing, blooming or fruiting in my garden. So here is my latest one for this super potent Summer Solstice period...Blackcurrant and Rose petal jam. This has to be one of the most beautiful medicinal plants in the UK. Its as rare as hens teeth in the wild, mostly found in gardens nowadays but I am so lucky to have stumbled accross a large patch of it in a nearby deciduous woodland. Ambling along a deer track with my dog one Spring morning a good few years ago, it stopped me dead in my tracks as the verdant green leaves and snow white bells sang out from the darkness of the woodland floor....
