π A quick & easy pumpkin pie recipe to fill you up and keep you healthy this autumn! π₯§
So many of our clients say they miss baking so weβre using this simple recipe to ignite the baking bug again in our clients!
Donβt skip the spices - cinnamon is rich in antioxidants, itβs anti inflammatory and supports heart health! β₯οΈ πͺπ» Ginger is great for digestion, boosting immunity and lowering blood sugars!
Ingredients: π₯§
1 (9 inch) single crust shop bought or homemade pastry
3 large eggs
100g granulated sugar
65g light brown sugar
450g homemade pumpkin puree
175ml whipping cream
1 teaspoon vanilla extract
1 Β½ teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon fine sea salt

PREPARE CRUST
Roll out half of the pie dough on a floured surface to fit a 9-inch pie dish. Roll from the centre outwards for even thickness.
Place the dough into the pie dish and trim the edges to within 1 inch of the dish. Pop in the fridge while you prepare your filling.
PUMPKIN PIE FILLING: π
Whisk the eggs and both sugars together until smooth. Add homemade pumpkin puree, cream, vanilla, cinnamon, ginger, cloves, and salt. Whisk until well blended.
BAKE THE PIE:
Preheat the oven to 220Β°C
Place the pie dish on your baking sheet and pour the pumpkin filling into the pie shell.
Bake the pumpkin pie at 220Β°C for 15 minutes. Reduce the oven temperature to 190Β°C and bake for 35 to 45 minutes or until a toothpick comes out clean!
