Are you ready for a tastebud tickle???
High Protein & Fiber Gluten Free Carrot Cake (allergens nuts
👀What you’ll need:
20cm square tin/silicon baking mold (12 large / 16 small slices)
Set oven to 170 degrees Celsius
Large mixing bowl
🚀Method & ingredients all in one!
🥣Add into mixing bowl:
120g grated carrot (3 medium carrots)
3 eggs, beaten
100 ml melted coconut oil
100 ml extra virgin olive oil
Zest of one large orange
1.5 tsp cinnamon
1/4 tsp nutmeg
50 ml almond milk
2 tbsp hulled h**p seeds
2 tbsp ground mixed seeds
1.5 tsp bicarbonate of soda
100 ml maple syrup
90g sultanas
25g oats
120g cassava flour or another gluten free flour
🧑🍳Then….
🥣Stir well & pour into the mold.
🥣Sprinkle generously with pumpkin seeds - chopped walnuts - drizzle of honey
🥣Bake on middle shelf for 30 minutes until knife comes out clean.
🥣Leave to cool in mold.
🤤Devour whilst just cooled!
or store in an airtight box for a few days
or I cut into squares and freeze = good for packed lunches
