If you’re roasting a butternut squash, stick the seeds in too for 15 minutes and you’ve got a nutritious little appetiser!

They are rich in protein, fibre, magnesium, zinc and healthy fats (great for my midlife women out there) and taste a bit like popcorn. ish. I love them and always wish there were more seeds in my squash : )

The lovely Sam asked me to bust a myth in a comment the other day, that eating well has to be complicated, expensive and boring.

It really doesn’t, but I think it’s presented in such a complicated way sometimes that you just switch off and think “I’m not going to bother with all of that, looks like a faff!”

And to be fair, so many insta recipes do look like a faff. Then if you do give them a go, they don’t even work out because it was just someone trying to get views and saves on a reel. Grrrr!

I think healthy food can be super simple and doesn’t need to cost the earth. I don’t have a massive food budget, but I get a lot out of what I buy through batch cooking and using up left overs. Buying seasonal produce helps lower the cost on our pockets and the environment too.

Finally, food shouldn’t be boring. There will always be meals you don’t love, but exploring new flavours, embracing herbs and spices and giving something a bit flavourless some flavour is the way to go. Pair bland foods with rich sauces, a side of fermented food and don’t overthink it. Nothing wrong with finding your favourites and sticking with them until the next favourite comes along! My current go-to lunch is butter beans with butternut squash, crispy sage and Parmesan. I’ll share that recipe soon.

If you’ve been living by food rules for years, it can feel scary to loosen your grip.

Structure can feel safe. Control can feel responsible.
But constant control isn’t the same as trust.

When you learn how your body actually responds to food, how blood sugar, stress, sleep and emotions all play a role, you stop needing rigid rules to feel ‘on track’ or like you’re ‘being good’.

You make choices from awareness, not fear.
And that’s where consistency becomes effortless.

Most people feel a little vulnerable being honest with a nutritionist about how they really eat.

They expect a set of rules, a plan to follow perfectly, or another version of what they should be doing.

But real nutrition support isn’t about perfect eating.
It’s about understanding your unique body and how to work with it, not against it.

Your body is constantly communicating with you through energy, cravings, digestion, sleep and mood.

Let’s embrace a bit of hygge! In and amongst the craziness, I’m meeting in cosy spots for a cuppa or meal with friends, enjoying some chilly walks on the moors and then getting home to a hot drink and blankets. My lovely friend also shared another wonderful book with me recently called ‘Making Winter’ by Emma Mitchell which is fast becoming a favourite! It has so many ideas for turning a bleak day into a cosy, nurturing ritual of baking, making and resting. It’s so important to make time for rest during the winter, my body craves it - does yours?
