๐ Homegrown Aubergine Stew โ A Taste of Comfort & Goodness ๐ฟ
Today, I made a lovely stew using my homegrown aubergine! ๐
๐ฅ Ingredients:
โข 1 small homegrown aubergine, sliced
โข ยผ courgette, sliced
โข ยฝ yellow pepper, ยฝ green pepper, ยฝ red pepper (all chopped)
โข 1 scotch bonnet pepper, finely chopped (optional for heat)
โข 1 onion, chopped
โข 2 cloves garlic, chopped
โข 1 small portion yam, peeled and cut into chunks
โข 1 small potato, peeled and cut
โข 1 tin mackerel in olive oil
โข 1 cup chopped butternut squash
โข 1 tbsp Patakโs Madras spicy sauce
โข ยฝ tsp black pepper
โข ยฝ tsp garlic salt
โข A drizzle of olive oil (if needed)
๐ฉ๐ฝโ๐ณ Hereโs how I made it:
1. Boil the yam and potato until tender.
2. In another pot, heat the mackerel with its oil, add onion and garlic, and cook until fragrant.
3. Add the aubergine, courgette, and mixed peppers โ let them soften and soak up the flavours.
4. Stir in the scotch bonnet, black pepper, and garlic salt.
5. Add the butternut squash and Patakโs Madras sauce, then cover and let everything simmer into a rich, hearty stew.
6. Serve warm with the yam and potato on the side.
