I love how the recipes from my diploma training go so well with the recipes I learned at . Meaning that not only do I skill up and try out new techniques and recipes but our family gets some scrummy dinners too!

Getting my teeth into the recipe development training, it’s getting my creative juices flowing and teaching me new ways to think about flavour pairings & texture.
I still find plating a challenge though! I just want to put too much food on the plate and can’t stand fussing around with it whilst it gets cold 🫣 Learning to see it as more of an art project now, rather than a meal I’m about to eat!

Day 4 and it’s a day to tickle the senses….

We start the day grinding our own spice mixes starting with one of my favourites - Ras el Hanout. This we use in a sumptuously moist lemon and apple cake which we decorate with a tart lemon drizzle and freeze dried rose petals.

We lunch on an Indian feast we spent the morning creating and our usually chatty group falls quiet as we ooh and aah over the flavours and spices.

The afternoon is equally tasty using freshly made kimchi for our mung bean and kimchi pancakes with a gingery soy dipping sauce.

We finished off by making seedy crackers to go with a nut cheese that’s has been gently fermenting over the week ready for tomorrow.

I even managed to fit in another one of my random walks and a haircut! 😂

Another day another adventure into flavour. Thai this time!

Some great tips on how to swap out some ingredients for more local produce and where to source more unusual ingredients when wanted.

We checked on our sprouts, used a GIANT pestle & mortar but forgot to burp our sauerkraut 😂

At the end of the day we were treated to an informative talk (all things plant based nutrition) with local nutritionist whilst enjoying our scrumptious mango cheesecake.

I then took myself off for a walk where a local woman insisted I join her and her doggies for a walk through the woods whilst putting the world to rights!

Once home, poured myself a beer, enjoyed the view from my balcony with Summer rolls and spicy peanut dipping sauce before Pad Thai and a good film.

Anyone would think I’m on holiday!

Exciting news 🤩

I’ve been a foody for as long as I can remember, memories stretching back to making lentil burgers for friends as a teenager. (Very Messy!!) and using my mums battered whole food cookbook.

I’ve run a cafe in Watford, cooking workshops at retreats, market stall, smoothie van, studied naturopathic nutrition, coached people on healthy eating and private chef to clients in their homes…

Now it’s time for me to skill up! Try new recipes and cooking techniques. Stretch my creativity and boost my confidence.

Over the next 6-11 months I am doing a vegan chef diploma run by Chef Day Radley and tomorrow I’m off to a 5 day plantbased cookery course run by .
So excited to give myself this experience and follow my joy.

What a way to spend a Sunday! Rustled up some scrummy Buddha bowls and a raw citrus cheesecake for retreat day peeps at and had the pleasure of joining in the day myself.

The wisdom, warmth and vulnerability shared by these women meant I left feeling heard, seen and part of something bigger.

Kates presence always brings a huge smile to my face and her yoga nidra is sublime.

Sunday Brunch.

The Little One has gone off baked beans so I knocked up some homemade baked beans instead.
Smoky paprika, garlic, soya sauce, agave, balsamic vinegar, seasoning, chop toms, cannellini beans and chickpeas obvs (coz chickpeas are life).
The verdict was “Yum”.

Chucked in some leftover potato & sweet potato wedges chopped up and fried in with the mushys too.

It’s been a much needed lazy Sunday here. Pjs, pottering and now onto some baking. Wish me luck! X
