Festive Quiche to use-up leftover veggies. For the base: Rub 200 g white spelt, 1/2 teaspoon of salt with 75 g butter, add 1 dl water and form a dough. Roll out in 24 cm tin. Line it with sprouts, parsnip, bacon and cheese. Mix 1 egg with 2 dl milk and 1 teaspoon of cornflour, cover the filling and bake it at 180 degrees in the middle of the pre- heated oven.Wonderful with the special festive bacon from Morrisons .

As for Sunday, why not try this lovely speciality from the Swiss Kanton Graubünden? This tart keeps for over a week and is not as labour intense as it sounds.

Swiss Walnut Tart (Bündner Nusstorte)

Filling
200 g chopped walnuts; 100 g sugar; 25 g honey (roughly 2 tablespoons); 200 ml double cream; 0,25 dl hot water
Shortcrust pastry
350 g white spelt flour; pinch salt; 100 g sugar; 150 g butter; 1 egg;
1 egg yolk for eggwash
For the shortcrust pastry, mix together the flour, salt and sugar in a large bowl. Add the cold butter in pieces and rub into the flour mixture with your fingers until it is sandy. Add the egg and stir lightly until you have a dough. Roll it into a ball, wrap it in cling film and let cool in the fridge for about 30 minutes.
Filling
In a small pot, warm the cream and honey. In a large pot, caramelise the sugar until it reaches a golden brown. Add the hot water (watch out, it may splutter), and stir over low heat until it is all melted together. Stir in the warm cream with the honey and add the walnuts – let it cool.
Roll out your dough and line a 24 cm baking pan, using about two thirds for the base and sides and the rest to form the lid. Fill with the cooled nut mixture. Lay the lid on top and press it around the edge so it is sealed, then prick it all over with a fork. Brush the top with the whisked egg yolk.
Bake for about 30 minutes in pre-heated oven at 200°C or until the top is golden brown.

Celeriac is a great source of vitamins B6, C and K, antioxidants and important minerals, such as phosphorus, potassium and manganese. So why not try this very easy recipe?

Maggie’s Celeriac Salad
Finely grate one small celeriac, immediately add lemon juice to prevent browning, finely cut or grate 2 apples, roast 100 gr of chopped walnuts with 2 tsp of honey, mix with a dollop of mayonnaise or yoghurt and serve as a starter.
