Great idea for a stormy weekend!

Celeriac is a great source of vitamins B6, C and K, antioxidants and important minerals, such as phosphorus, potassium and manganese. So why not try this very easy recipe?

Maggie’s Celeriac Salad
Finely grate one small celeriac, immediately add lemon juice to prevent browning, finely cut or grate 2 apples, roast 100 gr of chopped walnuts with 2 tsp of honey, mix with a dollop of mayonnaise or yoghurt and serve as a starter.

These cookies are a big hit in our house! My 11 year old can make them all alone - that's how easy they are to make if you need convincing... needless to say that they are delishious. Have a lovely weekend everyone.

Chocolate Chip Cookies (by The Cooking Foodie)

115 g butter, soft, 50 g white sugar, 100 g soft brown sugar
1 egg, vanilla flavouring, 190 g white spelt flour, ¾ tbsp bicarbonate soda, 140 g chocolate chips

Mix the butter and sugar, stir in the egg and vanilla flavouring. Add half the flour and mix it well, add the other half with the bicarbonate soda and mix it again. Lastly, stir in the chocolate chips or chopped up chocolate bar and form round balls with a tablespoon, leave enough space around the individual biscuits as they will spread out. Put the formed biscuits in the fridge for 30 minutes and then bake them at 180°C in the middle of the preheated oven for 10-12 minutes.

The walnuts are almost ready! Time to use up last years with this very easy and fairly quick cake:

Coffee and walnut cake
• Preheat the oven to 180C/160C Fan/Gas 4. Lightly butter two deep loose-bottomed 20cm/8in round tins and line the bases with baking paper.
• Put the butter, sugar, eggs, flour, baking powder and coffee in a large mixing bowl and beat together (using an electric hand whisk if you have one) until well combined and smooth. Fold in the walnuts.
• Divide the mixture evenly between the tins. Level the surface using a spatula or the back of a spoon.
• Bake for 25-28 minutes, or until an inserted skewer comes out clean. Leave the cakes to cool in the tins for 5 minutes, then run a small palette knife or rounded butter knife around the edge of the tins and carefully turn the cakes out onto a wire rack. Peel off the paper and leave to cool completely.
• For the filling and topping, beat the butter and gradually add the icing sugar. Add the coffee and beat until smooth.

Choose the cake with the best top, then put the other cake upside-down onto a serving plate and spread with half the coffee icing. Sandwich together with the other half. Ice the top of the cake and decorate with the walnut pieces to serve.
Cake: 250g butter, 1 tbsp instant coffee (dissolved in 1 tsbsp hot water, cooled), 250 g white spelt flour, 250 g golden caster sugar, 2 ½ tsp baking powder, 4 eggs, vanilla essence, 85 g walnuts (chopped)
Filling and topping: 125 g butter, 225 g icing sugar (sifted), (dissolved in 1 tsbsp hot water, cooled), walnut halves to decorate.

One of the best apple cakes ever! Happy weekend everyone.

Bloody Butcher Apple Cake
Ingredients (for 20cm tin, 8 pieces)
3 apples (bloody butcher or another firm cooker, peeled, cored and grated approx. 250 gr), 60 gr mixed peel or raisins, 75 ml olive oil, 1 egg, 1 tbs hot water, 100 gr demerara sugar, 1 pinch of salt, 100 gr spelt flour, 80 gr wholemeal flour, 2 tps baking powder, ½ tsp cinnamon, icing sugar for dusting.
Mix sugar with oil and water until it is slightly dissolved, add the egg and whisk thoroughly. Add everything else, mix it well and pour into greased tin. Bake at 180°C in the middle of the preheated oven for 30-40 minutes. Let it cool off and dust with icing sugar.
