Willy Chase: I grew up here in Herefordshire and the humble spud has brought me highs and lows, from trading and supplying supermarkets, to frying chips and distilling award winning spirits. With a new found consciousness about health and fitness, I have been busy building a kitchen here on my farm to make good-for-you stuff, and now it’s great to share with you my brand new tasty wholegrain FIT CORN. Fresh air popped corn - not fried - made by hand here on my farm in Herefordshire. Our new range features grown up flavours of guilt free satisfying popcorn seasoned with my favourite ingredients and superfoods. I don’t do twee stories here, but I do believe we are what we eat, and like many people I just want to get fitter, be happy and make a difference. And air popping makes a big difference – reducing calories and saturated fats in the packet, retaining the positive properties of the oil and protecting our environment - creating a cleaner, greener, fitter popcorn. Here we like to do things ourselves, so we don’t outsource, we do the opposite – on the farm we’ve started from scratch and built our own popcorn factory, with a kitchen for creating seasonings from real foods, and we’re increasing our corn production to supply it. We’re about championing local, fresh, and seasonal - avoiding fatty snacks, unnecessary ingredients and mass produced foods.

There’s something truly magic about near Bath. ✨

Last week, the W***y’s ACV team took over for a day that was as beautiful as it was educational.

Our resident expert, Lydia, dove deep into the science of living foods during her fermentation workshop.

We explored the fascinating nuances between the living Mother and our apple cider vinegar.

Beyond the science, it was a masterclass in hospitality. Huge thanks to Megan and the team at The Pig - watching them prepare the space was like watching a choreographed musical! Pure poetry in motion. 🎶🍽️

Grateful to everyone who joined us for a day of wellness, delicious food and a healthy dose of apple cider vinegar. 🍎💪

At the heart of W***y’s ACV is the living ‘Mother’ - a natural probiotic culture that has been quietly supporting wellbeing for generations.

This spring we’re choosing to celebrate the mothers we all know: the ones who raised us, the friends who hold us, the bodies that carry us, and the inner voice that tells us to slow down, breathe, and nourish ourselves.

Join us for the W***y’s ACV Supper Club and Fermentation Masterclass on Friday 6th March 2026 celebration of International Women’s Day. We will be hosting a vibrant plant‑based feast created by chef and cookery teacher Laura Pope, who has cooked for Jamie Oliver, Guy Ritchie and Claudia Winkleman.

This one‑night‑only menu for 60 guests showcases the best of female‑led and quality‑driven producers, featuring Northern Pasta, Bold Bean Co’s exceptional legumes, nourishing Borough Broth and Garlic Farm, as well as our organic partners at Isle of Wight Tomatoes, and beautiful dairy from W***y’s Wonky Barn.

Expect bold flavours, seasonal produce and inventive dishes elevated with W***y’s ACV vinegars and other small‑batch ferments. A joyful, nourishing evening honouring brilliant ingredients and the women who create them. We will also be offering non alcoholic probiotic cocktails and complimentary wine with the table.

Guests also will enjoy a relaxed 30-minute fermentation masterclass, sharing simple ways to bring gut-friendly ferments into everyday cooking. Each guest will head home with a thoughtfully curated W***y’s goodie bag, filled with favourites to continue the flavour long after the evening ends.

More about Laura: Laura has 20 years of experience as a chef, working around the world as a private chef, and is now based in Dorset, where she hosts a series of cookery demonstrations and lunches from her kitchen.

Classically trained at Leith’s School of Food and Wine, Laura has been greatly influenced by her time at Ottolenghi in London, Le Manoir de Raynaudes in south west France and Chez Panisse in California. Specialising in seasonal, Mediterranean-style cooking, Laura’s rustic and flavoursome dishes will become a core memory for your taste buds.

Due to our unique size and style, if you have any allergy or intolerances please contact us ahead of time and we will do our very best to accommodate. As a polite reminder we are unable to make any changes to the menu on the day.

Keep watching for pancake flipping techniques

🥞 PANCAKE DAY 🥞


2 tbsp W***y’s Apple Cider Vinegar
180ml milk
125g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda
1 egg
Butter, for cooking

- In a small bowl, mix the milk with W***y’s ACV and leave to sit for 5–10 minutes to curdle slightly.

- In a large bowl, combine the flour, baking powder, bicarbonate of soda and egg.

- Pour in the milk and ACV mixture, stir until just combined, then let it stand at room temperature for 15 minutes (do not stir again).

- Heat a non-stick pan or griddle over medium heat and melt a little butter.
Pour about 60ml (¼ cup) of batter into the pan for each pancake.

- Cook until bubbles form on the surface, then flip and cook until golden on the underside.

Pickled vs fermented radishes. Both delicious, both probiotic and both perfect for a valentines dinner.

Using W***y’s ACV to pickle adds a tang and a probiotic boost to any veg, these are washed and topped off with our live probiotic Apple Cider Vinegar. For the ferment we added water and salt, simple and super tasty.

We’ll be serving ours within a salad on valentines to add a tang and colour to the table 💗

My Story

From my 300 year old pristine organic orchards here in Little Marcle, Herefordshire, I bring you my unique W***y’s Apple Cider Vinegar. You could say I discovered ‘the Mother’ here in my apple orchards back in 2014. The ‘Mother’ is the name given to the live strands of friendly bacteria in Apple Cider Vinegar when it’s left unpasteurised and unfiltered. I believe the ‘Mother’ in my Apple Cider Vinegar is particularly potent as she’s live (no dead sediment in my bottles) and made from 48 varieties of classic old apples grown in my orchards around the farm here in Herefordshire. The land has been farmed as apple orchards for over 300 years according to local maps and nurtured free of chemicals. The ‘Mother’ often appears as strands or globules in my ACV, so I decided to bottle it in brown bottles to protect her and all her goodness! I believe I’m producing one of the World’s Finest Natural Remedies here at Laddin Farm.
