Valentine’s Day is a day traditionally celebrated with expressions of love for others, but among the flurry of heart-shaped chocolates and extravagant gifts, there’s one relationship that often gets overlooked—the relationship we have with ourselves. 🫶🏼

Let’s turn the focus inward and celebrate self-love.

❤️ Practice self-compassion: Treat yourself with the same kindness and understanding that you would offer to someone else. Be gentle with yourself when faced with setbacks or challenges, and remember that perfection is an unrealistic standard.
🧼 Nourish your body: Show love to your body by nourishing it to promote overall wellbeing. That could be having a long bath, enjoying a hearty meal, or having a treat.
🚶🏻‍♀️ Move your body: Physical activity releases endorphins, which can boost your mood and reduce stress.
😴 Prioritise sleep: Create a calming bedtime routine and prioritise relaxation to ensure restful sleep.
‼️ Set boundaries: Learn to say no to activities or commitments that drain your energy or compromise your wellbeing. Setting boundaries is not selfish—it’s an act of self-care that allows you to prioritise your own needs and protect your mental health.
🧘‍♀️ Practice mindfulness: Take time each day to quiet your mind and be present in the moment.
🗣️ Seek support: Don’t be afraid to reach out for help if you’re struggling with your mental health. Whether it’s talking to a trusted friend, family member, or seeking professional therapy, seeking support is a sign of strength, not weakness.
✍️ Engage in self-reflection: Take time to reflect on your values, goals, and priorities can give you a sense of purpose and fulfilment.
🥳 Celebrate your achievements: No matter how small.
🙏 Practice gratitude: Take time each day to express appreciation for the people, experiences, and things that bring you joy.

This febYOUary, let’s make a commitment to love ourselves unconditionally. By prioritising our physical and mental wellbeing, we can form a deeper sense of self-love and resilience that will carry us through life’s ups and downs.

They do say every days a learning day in dietetics… and here’s an example of that.

We had a referral for what I thought was support with coeliac disease, it wasn’t until delving deeper into the medical records that it came to light that it was in fact Refractory Coeliac Disease. Something I have not come across.

Creamy Beef and Shells in Garlic Parmesan Sauce 🤤

Talk about comfort food for these cold evenings!!

What you’ll need:
- 2 servings pasta shells
- 500g lean minced beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 crushed garlic cloves
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp plain flour
- Glass milk
- 150ml double cream
- 150g grated parmesan cheese
- 150g grated mozzarella cheese

How to make:
1. Cook the pasta shells in salted boiling water until al dente. Drain and set aside.
2. In a large pan over medium heat, brown the ground beef using olive oil. Add onion and cook until softened.
3. Stir in garlic, Italian seasoning, paprika, salt, and pepper. Cook for another minute.
4. Sprinkle the flour over the beef and stir to coat. Slowly add milk and cream, stirring constantly to avoid lumps.
5. Bring the sauce to a simmer and cook for 3-5 minutes until slightly thickened.
6. Stir in Parmesan and mozzarella cheeses until melted and smooth.
7. Add the cooked pasta shells and toss to coat in the creamy sauce.
8. Serveeeeee 😍

Hydrocephalus is a serious neurological condition in which there is a build up of cerebrospinal fluid (CSF) in the brain.

This post is to provide some information on the symptoms, diagnosis and treatment. As well as our role as dietitians in patients with this condition.

I have focused on the adult population for this post as this is the patient group I would have experience with currently.

Salad: the official meal of ‘trying to adult’ 🥗 😂

I love a good chicken caesar salad!!
How to make ✨

1️⃣ Chop some iceberg lettuce.
2️⃣ Add your cooked bacon and sliced chicken to the salad bowl
3️⃣ Toss salad with Caesar dressing (I used premade because I cba 🤫) until every leaf is living its best life.
4️⃣ Add a generous amount of parmesan. More than you think, then more.
5️⃣ Finish with croutons for crunch.
6️⃣ Optional: sliced red onion and beetroot

Serve and enjoy 🥗😌

How many times are you completing an assessment with a patient and they turn to you to say “I was dreading seeing you” “I thought you’d be too bossy with foods I can and can’t have” - for me, it’s happened more times than I can remember. 🙈

It doesn’t take the patient long to figure out that this is not what we are about. Our aim is to promote and maintain optimal health, and to prevent and treat diseases, by providing evidence-based, practical advice about food and nutrition. 🥕 🍔 🍎 🍫

So no, it doesn’t matter what we as dietitians eat, nor what size we are. This won’t impact our professional, and empathetic approach to support you in meeting your health goals.

Pumpkin looking sad on your window sill since Halloween is officially over?

Here’s a recipe to make use of your pumpkin to reduce waste ♻️ 🎃

~ CREAMY SPICED PUMPKIN SOUP ~

What you need:
1. 2 tbsp olive oil
2. 1 large onion finely diced
3. 1 large pumpkin (deseeded and chopped into chunks (remove stem)
4. 700ml water (1 vegetable stock/ chicken stock)
5. 1 pot single cream
6. 1 large dollop creamed cheese
7. Salt and pepper
8. 2 birdseye chilli’s finely diced
9. 2 garlic cloves crushed
10. 1 tsp hot paprika

To serve:
- roasted pumpkin seeds
- baguette and butter

How to make:
1. Heat olive oil in a large saucepan, gently cook diced onions for 5 mins until soft.
2. Add pumpkin to the pan, then carry on cooking for approx. 10 mins, stirring occasionally until it starts to soften.
3. Add chopped garlic, chilli and hot paprika into pan and stir.
4. Pour 700ml vegetable or chicken stock (I used both 😈) into the pan and season with salt and pepper. Bring to the boil, then simmer for 10 mins until the pumpkin is very soft.
5. Pour single cream and add dollop of cream cheese into the pan, bring back to the boil, then purée with a hand blender.
6. Serve with baguette and topped with pumpkin seeds.

To make the roasted pumpkin seeds:
1. Spread flat onto baking tray
2. Add olive oil and preferred seasonings (optional) - I added garlic powder, hot paprika, aromat and black pepper.
3. Allow to cool, great to snack on, or add to soup or salads. Store in an airtight container.
