Greek Lemon Chicken

Chicken cooked with lemon, spices and herbs in the Greek style makes an easy supper. Just put everything in a roasting pan and pop it in the oven and forget about it for 25 minutes. If you’re eating al fresco, you can even cook the chicken and vegetables over hot coals on the barbecue.

Serves: 1
Prep time: 15 Minutes
Cook time: 25 Minutes
Calories: 200 kcal per serving

Ingredients
½ tsp ground allspice
½ tsp dried oregano or marjoram
Finely grated zest of 1 small lemon
1 x 125g boneless chicken breast, skinned
100g fennel, thinly sliced
100g cherry tomatoes on the vine
Spray oil
Juice of ½ small lemon
Salt and freshly ground black pepper
A handful of rocket or watercress
Chopped dill or parsley for sprinkling

For the tzatziki:

Tofu Tandoori Kebabs with Indian Salad

These delicious vegan kebabs are easy to assemble and cook on a ridged griddle pan. Tofu is an excellent source of protein and minerals and is very filling. The spicy marinade gives it flavour and colour.

Serves: 2
Prep time: 20 Minutes
Cook time: 10 Minutes
Calories: 200 kcal per serving
Total Fat: 8 g

Ingredients
200g extra-firm or firm tofu, cubed
1 green pepper, deseeded and cut into chunks
2 small courgettes, cut into chunks
½ small onion or shallot, quartered
1 fresh red chilli, cut into quarters lengthwise
spray oil
paprika or cayenne, for dusting
chopped coriander, for sprinkling

Marinade:
50g dairy-free natural soya yoghurt
1 garlic clove, crushed
½ tsp garam masala
½ tsp ground turmeric
½ tsp paprika
salt and freshly ground black pepper

Indian salad:
8 cherry tomatoes, chopped
¼ cucumber, cubed
2 spring onions, chopped
juice of 1 lime

Thai Prawn Skewers

Here’s another sizzling recipe that would taste amazing served with our Thai Green Style Curry with Noodles (for Step 3 and above).

Use frozen raw prawns for this dish. It’s a good idea to keep a packet in the freezer – they defrost quite quickly at room temperature and will taste much better than ready-cooked prawns.

Ingredients
Prawn skewers and bean sprout salad:
300g peeled raw tiger prawns
60g bean sprouts
¼ small cucumber, cut into matchstick strips
1 green or yellow pepper, deseeded and
thinly sliced
3 spring onions, chopped
2 tbsp chopped fresh coriander

Marinade and dressing:
1 red chilli, cut into thin shreds
1 tsp grated fresh root ginger
1 garlic clove, crushed
1 tbsp light soy sauce
2 tbsp nam pla (Thai fish sauce)

𝗚𝗮𝗹𝗮𝘅𝘆 𝗟𝗲𝗺𝗼𝗻𝗮𝗱𝗲

Serves: 1
Calories: 14 kcal per 500ml
Steps: Suitable for all Steps

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
½ teaspoon of butterfly pea powder (or) 4-5 butterfly pea tea bags (check to ensure the brand you purchase is very low calorie, less than 20kcal, as calories may vary)
1 teaspoon of Pink Lemonade Water Flavouring
500ml still water for ice
Slice of lemon (for garnish)
Sparkling water

𝗣𝗿𝗲𝗽𝗮𝗿𝗮𝘁𝗶𝗼𝗻:
𝗕𝗹𝘂𝗲 𝘀𝗹𝘂𝘀𝗵𝗶𝗲

Mix the butterfly pea powder with 250ml of still water, stir until the water turns a very deep blue colour.

Pop the blue mixture into a freezer bag and leave until frozen.

𝗣𝗶𝗻𝗸 𝘀𝗹𝘂𝘀𝗵𝗶𝗲
Mix the ½ teaspoon of Pink Lemonade Water Flavouring with 250ml of still water, to make a still pink lemonade mixture.

Pop the pink lemonade mixture into a freezer bag and leave until frozen.
Assembly

Once frozen, crush your two ice slushie bags until you’re left with small ice crystals.

Take your glass and layer the two slushies; starting with the pink slushie, followed by the blue – don’t forget to leave some space to add the sparkling pink lemonade.

Mix ½ teaspoon of Pink Lemonade Water Flavouring with the sparkling water to create your fizzy pink lemonade mix.

Pour the fizzy pink lemonade mixture into the glass – fill it to the top.

Add a slice of lemon to the glass to garnish and enjoy!

(Watch as the drink turns completely pink when melted!)

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Zero calorie olive oil (e.g. Frylight)
110g prawns
100g baby spinach
1 x medium tomato, chopped into small cubes
½ red pepper and ½ yellow pepper, cut thin lengthways
Dried basil flakes
Salt
Chilli flakes (optional)

𝗠𝗲𝘁𝗵𝗼𝗱
Spray a non-stick frying pan five times with zero-calorie olive oil and heat
Fry the prawns for 4-5 mins until pink and cooked through
Chop one medium tomato into cubes and set aside
Steam the baby spinach. Put spinach into a microwaveable bowl, add 2tbsn water, cover with a microwaveable plate and microwave for 30 secs
Halve a red pepper and yellow pepper. Cut thin slices lengthways and pan fry with the tomato for 2 mins, in a non-stick frying pan with a few sprays of zero-calorie olive oil

100g frozen or canned edamame beans, drained
100g frozen peas
50g broccoli
25g red cabbage
10g carrot, a few grated carrot ribbons for colour
2 tbspn soy sauce
1 tspn white wine vinegar

Boil the edamame beans and peas for 5-10 mins. Alternatively, add to a microwaveable bowl with 3 tbsn water, cover with a microwaveable plate and microwave for 2-3 mins
Cut broccoli into small florets and cabbage leaves into dice-sized squares and boil in a saucepan for 4 mins

Place the veggies and pasta into a bowl, add the soy sauce and white wine vinegar and toss together

Try out this berry tasty recipe using our Raspberry and Elderflower Water Flavouring created by a professional mixologist.

Serves 1
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
6x mint leaves
25ml water
1/4 fresh lime
1/4 of a teaspoon of The 1:1 Diet by Cambridge Weight Plan’s Raspberry and Elderflower Water Flavouring
125ml Water
Ice cubes
Crushed ice
Raspberry and lime to serve

𝗠𝗲𝘁𝗵𝗼𝗱
Place mint leaves into the bottom of the cocktail shaker with 25ml of water and crush well
Squeeze quarter of a lime into crushed mint mixture and stir

Add generous helping of ice cubes into mixture and shake well
