Ingredients Of Keto Bread

5 large eggs
2 1/2 cups fine almond flour
1/3 cup coconut flour
1/4 cup melted cooled butter
1 1/2 tsp baking powder
1/2 tsp xantham gum
2/3 cup almond milk
1/4 tsp salt
1/4 tsp cream of tarter
Sesame seeds or everything bagel seasoning for topping (optional)

Method Of Keto Bread

Preheat oven to 350 f. Line a 9 into the 5-inch loaf pan with parchment paper. You can also use narrow pans that can take longer and taller bread loaf.
In a bowl combine coconut flour, almond flour, salt, baking powder, and xanthan gum. Set aside.
Separate egg whites with cream of tartar, beat it till it forms peaks. Beak egg yolks separately with butter. Add it to flour mixture and mix well.
Add almond milk and beat to incorporate. Fold egg whites in it.
Transfer batter to prepared pan and smooth it with a spatula.
Bake for 50-60 minutes or until the bread is fully baked. Toothpick inserted in the bread should come out clean.
Let the bread cool inside the pan for 10 minutes, then take it out and cool completely.

Ingredients Of Keto Cauliflower Mac And Cheese

remaining half of mild cheddar and 2 ounces of whole milk mozzarella. When the mixture is evenly combined, pour in half of the cheese sauce and gently fold to saturate. If you feel the mixture is too dry, add a little more cheese sauce. You don’t want to pour it all in because cauliflower heads vary in size and weight, and just in case you have too little cauliflower and far too much sauce (you can save whatever sauce is left in the fridge for another day), you don’t want it swimming in sauce. The feel you’re going for is moist and almost pasty, so add just enough cheese sauce until it’s at that point. Remember, this sauce will loosen as it bakes, so if you add too much you’ll have very runny cauliflower Mac&cheese. Here you can also add chicken in it.

Pour the cheesy cauliflower mixture into a small baking dish, and bake on the middle rack of your oven until bubbly, which should take between 15-20 minutes. Remove and allow to cool for 10 minutes before eating.

Blackened Shrimp and Asparagus Skillet Recipe

Ingredients:

- 1 lb large shrimp, peeled and deveined
- 1 bunch asparagus, woody stems removed and cut into 2-inch pieces
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1/2 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1/2 tablespoon dried thyme
- 1/2 tablespoon dried oregano
- 1/2 tablespoon black pepper
- 1/2 tablespoon salt
- 1/4 teaspoon cayenne pepper (optional for heat)
- 1 lemon, juiced
- Fresh parsley, chopped, for garnish

Instructions:

1. Begin by mixing the blackened seasoning ingredients. In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, salt, black pepper, and cayenne pepper (if using). Stir until well combined.

2. Prep the shrimp by patting them dry with paper towels. Place the shrimp in a medium bowl and sprinkle about half of the blackened seasoning mixture over the shrimp. Toss to ensure each shrimp is evenly coated. Set aside.

3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add asparagus pieces, and cook for about 4-5 minutes, stirring occasionally until they are tender but still crisp. If your asparagus is thin, reduce the cooking time by a minute or two, and if it's thick, you may need to increase the cooking time.

4. When the asparagus is cooked, transfer it to a plate and set aside.

5. In the same skillet, add the remaining 1 tablespoon of olive oil and heat. Add the seasoned shrimp to the skillet in a single layer, making sure not to overcrowd the pan. Cook for about 1-2 minutes per side, until they are cooked through and have formed a slightly blackened crust.

6. When the shrimp are done, add the cooked asparagus back to the skillet, and gently toss with the shrimp. Squeeze the juice of one lemon over the entire dish, and toss again to combine.

7. Serve your blackened shrimp and asparagus skillet hot, and garnish with fresh chopped parsley. This dish can be enjoyed on its own or served over a bed of rice or quinoa.

Lettuce tacos with ground beef:

Ingredients:

1 lb ground beef
1 onion, chopped
2 garlic cloves chopped
1 tablespoon ground cumin
1 tablespoon of chili powder
Salt and pepper to taste
Lettuce leaves for serving
1/4 cup chopped cilantro
1 lime in quarters

Instructions:

Heat a large skillet over medium-high heat and add the ground beef, onion and garlic.

Cook the meat until browned and cooked through.

Add the ground cumin, chili powder, salt and pepper and mix well.

Cook for 1-2 minutes more.

Place the lettuce leaves on a plate and add the ground beef in the center of each leaf.

Add avocado cubes on top of the ground beef and sprinkle with chopped cilantro.

Squeeze lime juice over the lettuce tacos and serve.

Taco Soup
1 lb Hamburger
1 small onion, chopped
1 can Rotel Tomatoes w/ chilies
4 oz Cream Cheese
1 1/2 cup Chicken Broth or stock, your preference
1 tsp Garlic Powder
1 packet Taco Seasoning
- Brown hamburger & onion, drain
- Melt Cream Cheese, then add tomatoes, broth/stock, garlic powder and taco seasoning and mix together
- Simmer for 30 minutes
- To serve, I topped with cheddar cheese and sour cream and Enjoy!!

Bake at 350 for 12-15 minutes
