I like to think I did a pretty good job of that.

The Duxedo had its first and last outing, and it was awesome ☺️

Please be aware we are closed from tomorrow afternoon at 3pm until Tuesday the 24th, as it’s the EPIC DMAs weekend!!!

Hundreds of the world’s best artists will be gathering at the stunning Allington castle to see who our winners are, and to get slightly too merry 😬

It’s the BEST night of the year, and I simply cannot wait to see all my cakey family there, and celebrate their wins 🥰

If anyone is collecting tomorrow, PLEEEEEASE stick to the strict 30 minute collection window, so I can be as stress free as possible, and get my glad rags ready for Saturday night!

A very happy Valentine’s Day to you all!

How do like your eggs in the morning?
I like mine in pancakes. With fresh chantilly cream, a drizzle of chocolate, and a handful of red berries. 🥰

Here’s my easy pancake recipe for the fluffiest pancakes, perfect served with any toppings.

Simply combine
135g plain flour
1 teaspoon baking powder
1 egg
130g milk
1.5 tablespoons of oil
50g sugar

Whisk until combined, and cook in a dry, non stick pan on a low heat. No need to add oil. It’s already in the mix!
Flip them when the bubbles stop and cook for just a minute more.

Want to level up your pancakes?
You can stir in some tasty additions before cooking.

“How do you get the colours to deepen?”
There’s two ways.

You can either use a stick blender to emulsify the colour and the butter.
Or you can do the microwave method, by taking a tablespoon of the coloured buttercream, microwave until just melted, and incorporate it back into the rest of the buttercream.

Both methods mean you use less colour!

“How did you learn that?! What cake school did you go to?!”

The answer? I didn’t, I taught myself.

I have an ability to see anything, and immediately know how to make it from cake.
From structure, to carving, and finishing. I can tell you how it’s done.
But I’ve had to learn the hard way.
I learnt on my own.

I studied basic engineering in college, and I’ve always loved working with clay, so I fused the two together and combined my skills.

I learnt over many years. With both failures and successes.
But one thing I wish I had, was guidance.

When I started, I didn’t know anyone who was making cakes like this.
I wasn’t in the industry long enough to ask friends how to do it.
I was on my own.

But I don’t want anyone to feel like I did. Those failures cost me time, money, and a whole lot of hair follicles!
So I’m putting together a series of online classes, where I teach the fundamentals of structured cakes, just like these.
I won’t be doing them on such a large scale, don’t worry 👀 but I will be teaching how to elevate cakes from a flat sculpture, to something with a bit more OOMPH!

So watch this space, and sign up to my newsletter, and you’ll be one of the first to know when the classes are released.

What am I going to do with the utter beauty that is Lloyd the Llove Llama?

Well, I’d quite like to keep him forever, but he won’t survive for long, as he’s 99% edible (board and structure makes the 1%).
I could take all the modelling chocolate off, and try and replace the cake inside with polystyrene. Unfortunately, he just won’t look the same 😞

So I’m going to hold onto him as long as I can before he has to go.
But this got me thinking. I want my art to be enjoyed, not wasted.

Supporting small businesses is more important now than it ever was!

We’re struggling.
Not because we aren’t working hard enough, but because we are being taxed, billed, and rinsed at every opportunity!

This is my favourite cafe in Eastcote, run by one of the best people I’ve ever met.
His ethos and actions as a business owner are genuinely inspiring and I look up to him daily (not just because I’m short) as inspiration for my own business model.
He’s not only created a nice place to grab a cuppa, but he pays the staff fairly, supports the community, runs the business ethically, has brought the high street back to life, and the money spent there goes back into circulation, unlike the tax dodging billionaires (I’m sternly looking at you Starbucks).

PLEASE support amazing places like this. They rely on community action to keep them going.
We all do!

And if you’re ever in Eastcote, pop in. He’ll be there working incredibly hard alongside the staff, as he always does.

It’s not often we get to see the inside of our cakes.
Of all the cakes I’ve made over the years, these are the only slices I’ve seen, and that’s because I took the pictures!

To me, the inside is just as important as the outside 😋
Those perfect layers of cake and filling are not only visually appealing, but they help with the stability of the cake.
Wonky layers = wonky cake!

Forget waiting for ‘the one’ to show up, and look towards the people already loving you, or those who need to know they’re loved.

Your mum, your sister, an auntie, a neighbour, a colleague, a daughter, a cousin, your best friend, your grandmother, your hairdresser, your nail tech, we all need love!

Forget what the supermarkets are telling you we need to buy, and change the way we view the 14th of February.

Call your gals, book a girly night in, order a takeaway, eat some cake, watch a trashy movie, have a laugh, and make it a day for loving whoever the heck we want to! Single or not.
