✨ Christmas Spice Meets Morning Focus ⚡️

It’s only the 3rd, but the festive vibes are creeping in… 🎄

Get ahead of the season with a deliciously healthy start.
This Christmas Spiced Granola by nutritionist .and.me is perfect for cosy mornings and mindful indulgence. ✨🎄

Ingredients:
3 cup whole rolled oats
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup walnuts 
1 cup mixed nuts ( macadamia & cashews)
3 tsp cinnamon 
1/2 tsp ground ginger
1/2 tsp all spice 
3 heaped tsp focus 
Pinch of salt
1/2 cup cranberries

Wet mix:
1/2 cup honey/ maple syrup
2 egg whites (if vegan replace with 2 flax eggs: 2 tbsp ground flaxseed, 4 tbsp water)
1/4 cup almond butter 
3/4 cup melted coconut oil
Zest of 1 orange 
Juice of 1/2 orange 

Method:
- Preheat oven to 160. Chop the nuts.
- Combine all of the dry ingredients in a big bowl. 
- whisk all the wet ingredients together in a bowl until smooth and then pour over the dry mix. Mix thoroughly so everything is coated. 
- Line a large baking tray with baking paper and press the granola firmly down in an even layer. 
- Bake for about 10 minutes until nicely golden. Turn the granola - don’t break it up too much and you want to keep the nice clusters. Bake again on that side for another 10-12 minutes. Watch it carefully so it doesn’t burn. It wants to be nice and evenly golden. 
- allow to cool then add the cranberries.

🍽️ Store in an airtight jar and enjoy!
