Injera - Traditional Ethiopian fermented flatbread made with Teff flour (naturally gluten free) - great with lentil dishes, soups or curries and also for breakfast with sweet or savoury foods. Very versatile and easy to make.
Looks like a brain whilst it's fermenting!

Teff flour is a good source of fibre. It's an great source of amino acids, especially lysine which is often missing in other grains. Lysine is essential for the production of proteins, hormones, enzymes, collagen, elastin Lysine also also supports energy production, calcium absorption and supports immune function

Blackthorn fruit AKA sloes.

Historically Blackthorn wood was used for water divining and walking sticks amongst other uses and the blossoms were considered a sign of life and death (some of the first spring blossoms of the year)

Herbalists have a history of using the fruit for mouth ulcers, sore mouths and gums, loose teeth due to its astringent properties.
Both the fruit and flowers can be used for diarrhorea, nosebleeds constipation, whitening teeth and eye pain.

Modern use of the fruit tends to be only for sloe gin or jams.

Loaded with vitamin C (40x oranges) as well as Vitamin A, B and K.
When citrus fruits where in short supply during WW2, hips were an important dietary supplement. Rosehips were gathered by communities to make rosehip syrup which was distributed to children's clinics all over the UK to prevent scurvy.
Traditionally rosehips have been used for constipation due to their mild laxative effect.
I tend to make rosehip syrup as an immune system tonic and store it for use during the winter. I also make marmalades and jams with any extra hips.

I picked these up after a few of these fell on my head as I passed under a walnut tree.😊

Absolutely one of my favourite nuts. Highly under rated.

The walnut was first introduced into England by the Romans who valued it as a food and cooking oil.

Walnuts are low glycaemic, a good source of polyunsaturated fats.
One of the best plant sources of Omega 3. A source of fibre and protein, an excellent source of manganese and copper, magnesium and phosphorus. Walnuts also include vitamin B6, folate, and thiamin.

The last 2 months of Blackberry obsession.
One of my favourite fruits. Wild and local. Often overlooked in favour of more 'trendy fruits' like blueberries, acai, goji.
Blackberries are an excellent source of anthocyanins, vitamin C, A, K, fiber, and minerals like manganese, potassium, magnesium, calcium and iron.
Apart from using the berries in crumbles, desserts, jams, jellies and wine, lesser known uses of the berry include making vinegars, pickling the unripe berries and using the berries as a natural dye.

Even in built up towns and cities. Medicinal herbs can be found growing in cracks and alongside pavements. A reminder to keep our awareness and connection to nature and its benefits.
Feverfew: affinity with the head (headaches, dizziness, tinnitus), and urinary organs, skin/inflammatory conditions (allergies, arthritis), also menstrual/ menopausal symptoms.
Mullein: supports lungs, glands and lymph (asthma, coughs, bronchitis)
Chelidonium: supports liver, gallbladder and skin complaints

At the end of our hiking adventure for charity☺️😅 Cape St Vincent. Most south westerly tip of mainland Europe. End point of the Via Algarviana walking routes. We clocked up 240km's of hiking tough terrain in just over 2 weeks. It's been a blast, thoroughly enjoyed the challenge, meeting lots of lovely people and experiencing different areas of the beautiful Algarve. Ready to hang up my hiking shoes and give my feet a much needed break!👣
