The latest research recap from the International League against Epilepsy gives so much hope for people affected by focal epilepsy to open up conversations with their doctors about trialling immunotherapy for their difficult to treat focal seizures.

The underlying mechanisms for the success are treating inflammation and improving blood brain barrier health with medications.

In addition, it is important to assess potential causes of inflammation by looking at diet, environment and psychological aspects as well as genetic predispositions (nutritional genomics).

🧁These easy to make organic dairy-free spelt flour muffins are rich in minerals (selenium, magnesium, calcium, chromium, copper, manganese and zinc) and contain both soluble and insoluble fibre essential for gut microbiome diversity. My whole family loved them and hope yours will too.

🤲The recipe can be customised to be dairy or gluten-free in line with your family’s needs and preferences.

🌰I used home-made organic nut milk (a mix of Brazil, pecan, walnut, cashew, hazelnut and almond nuts blended with filtered water, with a touch of pink salt and wild honey).

🥥Normally, I would make them grain and sugar free with coconut or hazelnut/almond flours and stevia, but had to cater for everyone’s needs this time and used organic whole grain and white spelt flours and a bit of coconut sugar.

Ingredients:
2 eggs
115 mls olive oil melted with 10 mls coconut oil
250 mls organic nut milk
100g coconut sugar
1 tsp Himalayan pink salt
1 tsp organic cinnamon powder
1 tsp organic vanilla essence
200 g white and 200 g wholemeal spelt flours
2 tsp baking powder
1 small ripe banana
100g wild blackberries

🥗We have been busy at Beautiful Mind Health thinking of and creating recipes designed to support brain health, especially in epilepsy, a chronic neurological/neurodevelopmental condition affecting both children and adults.

It is often difficult and sometimes contra-indicated with certain anti-seizure medications ASM to find food supplements that will not tip the balance between the health benefit and loss of seizure control.

💊This is the reason we use foods as targeted supplements (in addition to safe nutrient supplementation) in our therapeutic recommendations that address many of the problems associated with epilepsy, neuroinflammation and ASMs.

🎨We have designed a colourful leaflet for you highlighting some of our favourite foods, nutrients they contain and physiological actions supporting brain health in epilepsy.

Please remember, to avoid ingredients you are sensitive or allergic to and arrange food sensitivity testing if you suspect your family may have unwanted reactions to healthy foods.

💜 Gut-loving Chocolate Mousse the Whole Family Will Love! 💜

This is one of our favourite nourishing treats – a truly prebiotic + probiotic chocolate mousse that supports your child’s gut health while tasting absolutely delicious! 😋

It’s made with flavoursome cherry kefir, rich organic cacao powder, and a colourful blend of berry powders – including bilberry, blackcurrant, blueberry, and sea buckthorn – with just a touch of maple syrup for natural sweetness. 🍒🫐

You can easily swap the maple syrup for organic honey, inulin syrup, or even a little stevia if that works better for your family (for older children)🌿

The berries, cacao, and maple syrup aren’t just tasty – they’re full of prebiotic plant compounds that help feed the good bacteria and yeast in the kefir, creating a gut-friendly dessert that encourages a diverse microbiome for your child.
