Snack on something festive and nourishing ✨
These gingerbread energy balls are perfect for lunchboxes, work days and pre-gym snacks. Festive, nourishing, no-bake, and ready in 10 minutes. 🎄
Ingredients (makes ~12 balls):
1 cup (100g) rolled oats
1 cup (150g) soft pitted dates
⅓ cup almond butter (or tahini for nut-free)
2 tbsp maple syrup
1 tsp ground ginger
½ tsp cinnamon
¼ tsp nutmeg
1 tsp vanilla extract
Pinch of sea salt
Optional: 2 tbsp ground flaxseed for extra fibre & omega-3
Instructions:
Add oats to a food processor and pulse until fine.
Add the dates and blend until they form a sticky mixture.
Add almond butter, maple syrup, vanilla, ginger, cinnamon, nutmeg, and salt.
Pulse until everything comes together into a dough.
If the mixture feels too dry → add a teaspoon of water or maple syrup.
If too sticky → add a tablespoon of oats.
Roll into small bite-sized balls.
Chill for 20 minutes to set (or enjoy immediately if you can’t wait!).
Storage:
Fridge: up to 1 week
Freezer: up to 2 months
Optional festive extras:
✨ Roll in crushed walnuts
✨ Dust with cinnamon
✨ Add 1 tbsp cocoa powder for a gingerbread-brownie flavour
✨ Dip half in dark vegan chocolate
