I’ll be honest — I’m not a fan of autumn, but I do love the seasonal veg that comes with it. There’s something wonderful about cooking with what’s fresh and local — it’s tastier, more nutrient-dense, and even better for the planet 🌍
Autumn vegetables are little powerhouses for our health too — packed with vitamins A and C for immunity, fibre for digestion and heart health, and antioxidants to help protect against oxidative stress 💪
After a gorgeous sunny morning walk, I spent some time in the kitchen prepping our homegrown veg ; sweet potatoes (they look a bit different from shop-bought ones and need a little more love, but the flavour is worth it!), plus curly kale, red onions 🧅, tomatoes 🍅, green peppers 🫑, and cooking apples 🍎.
The result? A hearty veggie casserole with dumplings 😍, roasted sweet potatoes, and a comforting apple crumble. All made that bit more enjoyable with a glass of my favourite rosé 🥂 — especially as have a 4-for-3 offer on at the moment 💕
