• Golden Chicken Schnitzel •

This golden schnitzel recipes makes the perfect midweek dinner. Preparation is minimal and unlike your traditional schnitzel this recipe is baked not fried!

Check out the recipe and see what the egg dip is swapped out for. Simply delicious.

For this recipe I used flattened chicken breast but it would work perfectly with chicken legs, drumsticks, thighs or wings too.

Go on. Give it a try ⬇️

Recipe:

♡ 2 tbsp oil
♡ 2 chicken breasts (flattered with a rolling pin)
♡ 1/3 cup flour
♡ 2 tbsp ketchup
♡ 2 tbsp mayonnaise
♡ 1 tsp dijon or English mustard
♡ 1 tsp garlic granules
♡ Salt and pepper to taste
♡ 2/3 cup golden breadcrumbs

Method:

1) Add the oil to a baking tray and preheat at 180c. Place the chicken breast between greaseproof paper and using a rolling pin gently flatter until its half the thickness.

2) Add the flournto the greaseproof paper and gently coat the chicken. Throw away any excess flour.

3) In a small bowl, mix together the ketchup, mayonnaise, mustard, salt, pepper and garlic. Dip the chicken in the wet mixture until coated.

4) Add the golden bread crumbs to the greaseproof paper and gently lower the chicken. Flip over and press down the chicken into the nreadcrumbs until coated all over.

5) Place the chicken in the preheated oven dish and bake for 25 minutes, flipping half way until golden and crispy.

Slightly different post here to my usual recipe share but I thought how could I not share this!

I love using fresh ingredients and I love hand picking them even more so. So of course I absolutely loved hand picking these onions and strawberries at . Can you believe the size of them! 🧅

Hand picked from the ground and I got so carried away that my fridge is now over flowing with fresh, giant onions and I LOVE IT! I can't wait to use them in some new recipes this week 🥰

If you're wondering what to do this week, go and hand pick some fruit and veggies. Its great to see a working farm and how they naturally grow. I'm already looking forward to visiting the pumpkin patch this autumn. I'm already thinking, will it be pumpkin pie or soup 🤔🎃

• Super Quick Gnocchi 2 Ways •

Now, there are some nights where cooking completely from scratch is not what I fancy. Tonight was one of those nights where I wanted to be in and out of the kitchen in a flash.

15 minutes and this is a super quick gnocchi recipe was dished up!

Why two ways? Simple...I prefer tomato based sauces whilst my husband prefers cheesiness.

This recipe has a great combination of shop bought products and fresh produce. I even went onion picking this week!

Recipe:

1 large onion
100g button mushrooms
1 pack gnocchi
200g sauce of choice (this could be shop bought or homemade)
Salt, pepper and garlic to taste
1 tbsp oil

Method:

1) Roughly slice the onions.

2) Cut the mushrooms in half. Don't slice too small or they will disintegrate whilst cooking.

3) Add the oil to the pan and on a medium heat gently fry the onions for 5 minutes. Add the mushrooms and continue to fry for a further two minutes.

4) Add the gnocchi into the frying pay with 100ml cold water and continue to cook for a further 6-8 minutes until the water has been absorbed and the gnocchi has softened.

5) Mix in your preferred sauce and heat through. Enjoy!

• Gooey Red Velvet Style Cookies •

It's summer holidays so I've been back in the kitchen, testing out some super yummy recipes to share with you.

Check out that gooey, soft in the centre cookie 👀 this is the perfect hot out the oven cookie to enjoy!

You can whip these up in no time and they freeze perfectly well too, so you can enjoy a fresh cookie any time of the day.

Recipe:
Inspired by with some slight tweaks to suit me 🧡

125g soft butter
50g light brown sugar
50g dark brown demerara sugar
75g caster sugar
1 egg
1tsp vanilla
2tsp red gel colouring
275g plain flour
20g cocoa
1.5tsp baking powder
1/2tsp bicarb of soda
200g white chocolate chips

Method:

1. Cream together the butter and sugars until light and creamy.

2. Add the egg, vanilla and red food colouring. Beat well until combined.

3. Mix in the flour, cocoa, baking powder and bicarb of soda until a cookie dough is formed.

4. Add the chocolate chips and mix to evenly combine throughout.

5. Divide you mixture into 8 to make large cookis or in 14 for small/medium and roll into balls.

6. Place on a greaseproof sheet on a baking tray and freeze for 30 minutes.

7. Baked at 180c for 12 minutes. No need to flatten the dough.

8. Enjoy warm out of the oven.

• Baked Vanilla Cheesecake •

If you love cheesecake as much as I do, then this is the perfect dessert recipe for you 🥰🌟

Creamy and vanillary with a buttery biscuit base, you simply can't go wrong. It's doesn't take too long to make.

I'm all for individual desserts but this recipe would be fab in an 8" tin.

My go to baked vanilla cheesecake toppings are white chocolate, fresh strawberries and a dash of passion fruit 🍓 what will you top yours with?

Recipe:
250g cream cheese
110g caster sugar
1/2 tsp vanilla
1tbsp fresh lemon juice
2 eggs
6 digestive biscuits
25g butter

Method:

1) Preheat the oven to 180c and line a muffin tin with 6 cases.

2) Melt the butter in a small bowl. Place the biscuits in a large mixing bowl and using the end of a rolling pin, gently crush. Mix in the butter.

3) Divide the biscuit mix between the muffin cases and using the back of a spoon, push down into the base.

4) Use a hand whisk to beat the cream cheese, vanilla, sugar and lemon juice together until smooth, thick and creamy. Beat in the eggs one at a time.

5) Top the biscuit base with the cheesecake mix to 2/3 full and bake for 20 minutes or until slightly golden edges and just beginning to crack on the surface.

6) Remove from the oven and allow to cool fully before topping with your choice of fruit, sauces or chocolate.

**Once cooled, peel away the muffin case and the cheesecakes will stand freely.

Baking is for all hours of the day. There's nothing wrong with enjoying a treat or two in the morning 🥰

I wanted to head back into my kitchen today and make something sweet. 3 ingredients from my cupboard and 5 minutes later, I had homemade honeycomb setting 👌 Add some chocolate and you'll have your very own crunchie bar too! Or even swirl it through some homemade ice cream. Yum!

This recipe is honestly so simple, it's perfect for everyone to get involved in.

TIP 👍 TO WASH YOUR SAUCEPAN, FILL IT WILL BOILING WATER AND THE SET HONEYCOMB WILL DISSOLVE AWAY.

Recipe:

🍫100g caster sugar
🍫 4 tbsp golden syrup
🍫1.5 tsp bicarb of soda (not baking powder)

Method:

1) Line a baking tray with greaseproof paper.

2) Place a saucepan on a low heat and melt together the sugar and golden syrup. Do not mix, just gently swirl and the sugar will dissolve.

3) Turn the heat up slightly to a medium heat and simmer for 2 minutes until the colour of golden syrup.

4) Whisk in the bicarb of soda fast. The mixture will aerate and froth up. Immediately pour the mix onto your lined baking tray.

5) Leave for 15 minutes until set. If you are in a warm or humid environment, pop the tray in the freezer to prevent stickiness.

6) Once set, break the honeycomb into shards. If you want a crunchie bar, melt your favourite chocolate and dip away!

• Crispy Vegetable Fritters •

This is a fantastic recipe to sneak those veggies into any meal! These crispy vegetable fitters come together in just minutes and are simply delicious 🥕

I found them to be the perfect swap out if you don't fancy your go to carb of pasta, potatoes or rice. With the crispy outside, you won't even realise you are eating a fritter full of veg and goodness! Or even enjoy them as a snack paired with your favourite dipping sauce. The possibilities are endless 😍

Recipe:
1 large courgette
1 large carrot
1 tsp garlic (dried or fresh)
1 egg
50g plain flour
2 spring onion
2 tbsp oil of choice
Optional: 30g peas or sweetcorn
Salt and pepper to taste

Method:
1) Grate the courgette and squeeze out the liquid by hand - as much as you can. Place in a large mixing bowl.

2) Grate the carrot and add to the bowl with the garlic, chopped spring onion, flour, egg, salt, pepper and any additional herbs or spices. Stir together until well combined.

3) Line a plate with a paper towel. Place a frying pan over a medium heat and add the oil.

4) One the oil has heated, add 3 scoops (tablespoon size) of the vegetable mixture into the pan, flattening slightly with the back of the spoon.

5) Cook the fritters for 2-3 minutes until lightly golden. Flip them oven and continue cooking for an additional 2-3 minutes. Once golden and crispy, remove from the pan and transfer to the paper towel.

6) Repeat the cooking process until all vegetable mix has been used.

7) Enjoy!

• Berry Oaty Slices •

In my opinion, a new week calls for a new dessert! And this week's dessert is this sweet, crunchy and berrylicous slice 🍓

This is the perfect tray bake which holds it shape and would be paired perfectly with a cup of tea ☕ in the afternoon or topped with warm custard for a scrumptious dessert in the evening.

I went for strawberry but change the berry jam for apricot or orange marmalade. The choice is yours!
Recipe:
125g light brown sugar
125g plain flour
1/4 TSP baking powder
100g porridge oats
150g butter
1 tsp golden syrup
250g berry jam

Method:

1) In a bowl, mix together the sugar, flour, baking powder and oats.

2) Add the butter and rub together to produce crumbs. Mix in the golden syrup.

3) Press 1/3 of the crumbs into the base of a lined oven proof dish. Spread over the jam evenly and sprinkle the remaining oaty crumb on top.

4) Bake at 180c for 35-40 minutes.

• Slow Cooker Pulled Lamb •

I think when doing my weekly meal plan that I need to start taking into consideration the super hot weather ☀️

The original plan for last nights dinner was slow cooked beef with homemade crispy roasties, Yorkshire puds and roasted mixed veg but with the weather being 30c, there was no way the oven was being turned on! Luckily I had my food delivery the day before so I had lots of veggie options to choose from, so served our pulled lamb with spring greens, baby corn and mounge tout 👍🌟

A super quick and easy recipe ⬇️

Recipe:
500g lamb neck chops (perfect for slow cooking)
2 medium onions
50ml water
2tbsp gravy granules

1) Roughly chop the onion into large chunks and place at the bottom of the slow cooker.

2) Place the lamb chops on top and pour over the water. Season with black pepper.

3) Cook on low for 9-10 hours until the lamb flakes apart.

4) Serve with sides of your choice. Once the lamb has been removed, add the gravy granules to the lambs juices and pour over. Enjoy!

• Chocolate Bread & Butter Pudding •

This dessert is definitely a classic with a twist! 🍫 One simple ingredient addition and you have a completely different flavour.

You can whip this one up in around 10 minutes, so of you are too hot to be hanging around in the kitchen, then this is the perfect, super quick dessert recipe for you!
Recipe:
8 slices of bread
40g butter
50g dried fruit
400ml milk
50ml double cream
75g caster sugar
100g dark chocolate
3 eggs

Method:

1) Press the butter over the bread evenly and slice off the crusts.

2) Slice the bread in half into triangles. Using half of the bread, line the bottom of an oven proof dish, over lapping one another.

3) Sprinkle half of the dried fruit over the bread. Lay the remaining bread in top and sprinkle the remaining dried fruit.

4) Place the milk, cream, sugar and chocolate in a bowl. Gently heat to melt the chocolate.

5) Whisk the eggs together in a measuring jug. Gradually pour the chocolate mix into the eggs and continue to whisk.

6) Pour the chocolate custard mix over the bread. Leave to soar for 15 minutes and then bake at 180c for 30 minutes.

7) Optional - melt 30g of chocolate and drizzle over the pudding and enjoy.

• BBQ Meatball Sub •

In my opinion you can't go wrong with a footlong filled with homemade beef meatballs, BBQ sauce and cheese! This is such a simple recipe and definitely a crowd pleaser 👌

This recipe is also so adaptable - use your fave meat (lamb, beef, turkey, pork or even premade!) and then decide, are you a BBQ or tomato sauce lover?! 🍅

Recipe: Serves 2

°2 part baked bread rolls or garlic bread baguettes
°300g mince meat
°1 onion, grated
°3tbsp breadcrumbs or matzo meal
°2 eggs
°1tsp Dijon or English mustard
°1tsp garlic
°Salt and pepper to taste

For the sauce:
°150g chopped tomatoes or Passat's
°50g BBQ sauce
°1tbso honey
°Mixed herbs and black pepper

Method:

1) Mix together the mince meat, grated onion, breadcrumbs, eggs, mustard, garlic, salt and pepper in a large mixing bowl.

2) Roll 10-12 walnut size meatballs and place on a line baking tray. Bake for 15 mins at 180c.

3) Meanwhile, mix together the tomatoes, BBQ sauce, honey and herbs.

4) Slice the baguette down the centre but not all the way through. Using half of the sauce, spread over the base of the baguettes. Top with the meatballs and then the remaining sauce. Sprinkle over cheese of choice.

5) Bake the meatball subs for a further 10-15 minutes until cooked through and the bread is crispy. Slice in half and enjoy!

Oh! Welcome.

Hi. Welcome. It’s Nicole here and welcome to my Oh Crumbs food blog. As a full time teacher and puppy mummy, I’m all about quick, simple and honest dishes that have minimal preparation time but making sure they’re still bursting with flavour! Before we move forward, let me introduce myself. Let’s go back to the beginning. Baking started as a hobby for me in my childhood home. A bag of flour and the kitchen was my chill out place, where it was time to switch off from the world. Therapeutic would be the word. This love led me along the university path to study a food and nutrition degree. I then decided to share my love and passion and become a food and nutrition teacher – Trialling recipes and teaching the younger generations that there’s life apart from fast food. Anyway, let’s fast forward to 2020 and here I am, ready to share what I can with the world. I class my cooking style as Family Favourites. There’s nothing better than arriving home after a long day to a roast or cassarole that’s been slow cooking all day. It’s the inviting smell that travels around my home. It makes me want to snuggle up in front of the fire with a large mug of cocoa. Now, one thing you need to know about me is that I’m all about variety in life! So, remember, EVERYONE needs a chocolate brownie or cheesecake every now and then, or every day if you fancy it! (No judging here!). Go on, treat yourself.
