National Pie day

I often make a leek pie with a big green salad to go with it

I’ll often throw in left over chicken/ham and maybe leftover soured cream/youghurt with the egg mixture. Ie this is a bit of a throw it all together recipe:

Dough for the pie

75g white flour

75 g wholewheat flour

50 g oats

75 ml water

25 ml olive oil

1 tsp of salt

Grease a pie form and spread the dough out and pre cook for 20 mins

Filling:

3 leeks cut into fine rings and boiled for a few minutes

4 big eggs

50 ml milk

And add whatever soured cream/cottage cheese you have in your fridge

1/4 tsp of grated nutmeg

1 tsp fresh time

1 1/2 tsp of salt (I prefer herb salt)

Pepper

1 tbp of paprika

Sprinkle any leftover cheese on top

Cook at 200° C for 25-20 mins

And enjoy with a big salad

It’s still January - are you in the middle of your post-holiday reset?😄

Here’s a suggestion from Denmark...🇩🇰

As we need to eat many more vegetable every day🥕🍅

Why not start the mornings with Grøn Grød, suggested by Professor in Human Molecular Metabolism, Oluf Borbye Pedersen:

‘Grøn Grød’ (green porridge)

1/2 avocado

1/2 apple

Juice of one lemon

1/2 a thumb size grated ginger

1/2 a kiwi or 5-10 grapes

3 handfuls of fresh spinach

A bit of fresh parsley/mint

3 small bouquets of brocolli/or other green cabbage

2 dl cooled herbal tea or plain/or skyr

(You could add some seaweed too!!)

Top with wallnuts/fresh berries
