Ginger Milk Pudding (姜汁撞奶) originates from Guangdong and is part delicious dessert, and part awesome science experiment!

There are only 3 ingredients: 

• Fresh Ginger Juice (1 tbsp)

• Full Fat Cow's Milk (400ml)

• Brown Sugar (to taste)

The ingredients are super simple, but it all comes down to the technique:

1) Grate the fresh ginger and squeeze the juice into a mug or bowl

2) heat the milk to between 65° and 70° (this is very important, too hot and you kill the enzymes required for thickening, too cold and the reaction doesn't happen!)

3) pour the milk from a decent height into the juice. (The height is to combine everything, because you don't want to stir this mixture)

4) wait! It only takes 5-10 minutes for the pudding to set.

5) sprinkle on your sugar and enjoy

The TCM nerdy part:

This combination is quite brilliant from a Chinese Medicine perspective. 

Cow milk is very nourishing for Yin- it's incredibly moisturising. So much so that it can be too damp forming if your internal patterning is not of the dry type.

Ginger is a potent medicinal herb that is typically used to release the exterior (i.e-> great when you're coming down with a cold). It is very pungent -> meaning it strongly moves qi and blood. And it is also warming and tonifying for the digestive system (the most commonly understood use for us in the west). 

In combination, the damp forming aspect of the milk is mitigated thanks to the ginger's warming effects on the digestion, and its pungent quality further prevents this damp build up by making sure everything is kept moving.

Today I'm treating someone for lower back pain. A very common, and often very stubborn issue as the solution isn't always immediately clear - there are many potential reasons! Typically much of my first treatment is exploring the potential reasons for the pain whilst treating the pain directly. As treatments progress, the picture gets clearer and my treatments become more and more targeted.

It really supports your reserves, helps your kidney system, and gives you what you need to start the new year on the right foot. This recipe comes from 'Welcoming Food', a book by Andrew Sherman.
