Coach Collins’ Recipe of the Day
Baked Cottage Cheese Eggs

If you’re looking for something quick, cosy and satisfying for breakfast, this is one of my favourites.

It’s a warm hug in a dish, packed with protein, low in carbs, and super simple to make. Ideal for anyone on The 1:1 Diet Step 2 or Step 3, or just after something nourishing and delicious.

Ingredients (serves 2):
• 200g low-fat cottage cheese
• 4 medium British free-range eggs
• 1 tablespoon chopped fresh chives (or spring onions if preferred)
• A pinch of sea salt
• A pinch of cracked black pepper
• Low-calorie cooking spray

How to make it:

1. Preheat your oven to 180°C (fan 160°C/gas mark 4).
2. Lightly spray two ramekins or a small ovenproof dish with cooking spray.
3. Mix together the cottage cheese, eggs, chives, salt, and pepper in a bowl.
4. Pour the mixture evenly into the ramekins.
5. Bake for 20–25 minutes until set and slightly golden on top.
6. Serve hot with a fresh side salad or a few steamed greens.

Coach’s Tip:
Batch these up for a fuss-free, protein rich breakfast you can grab on busy mornings.

Such a simple little trick but honestly so handy…Perfect to keep in the freezer as a back up for teas and coffees, especially if you live on your own or don’t get through milk very quickly. No more waste, no more running out ā˜•

Pop them into a soft silicone tray if you can… much easier to get out when you need them.

MUSHROOM WRAP šŸ„
Step 3 & above | Approx. 400–450 kcal

A warm, filling wrap packed with flavour, fibre, and goodness. Perfect for a simple lunch or light dinner on plan.

Prep time: 10 mins
Cook time: 10 mins
Serves: 1

šŸ§„ Ingredients:

* 1 large Portobello mushroom (approx. 80–100g), sliced
* ½ small onion (approx. 50g), sliced
* ½ red pepper (approx. 60g), sliced
* 1 tbsp reduced salt soy sauce
* 1 tbsp balsamic vinegar
* 1 tsp maple syrup (reduce for lower sugar option)
* ½ tsp dried oregano
* Fry Light (or low-cal spray oil)
* 1 medium tortilla wrap (60g)
* 30g hummus or lighter alternative
* 1 handful baby spinach or shredded lettuce

šŸ‘©ā€šŸ³ Instructions:

1. Spray a non-stick pan with Fry Light and heat gently.
2. Add the mushroom, onion, and pepper. Cook for 5–7 minutes until softened and slightly golden.
3. Mix soy sauce, balsamic, maple syrup, and oregano. Pour into the pan and stir until coated and glossy (1–2 minutes).
4. Warm the wrap if preferred. Spread with hummus.
5. Add spinach or lettuce, then top with the hot veg mixture.
6. Roll tightly and toast in a dry pan or press for 1–2 minutes each side until lightly crisp.
7. Slice and serve.

Calories: 400–450 kcal
Protein: ~12–15g
Carbs: ~50–55g
Fat: ~10–12g
Fibre: ~8–10g

šŸ’” Coach’s Tips:

* For higher protein, add 80g grilled chicken or prawns and reduce hummus slightly
* For lower carbs, swap half the wrap for a large lettuce wrap or use a smaller wrap
* Skip sweet chilli sauces to stay more in control of sugars
* Great one to prep the filling ahead for quick meals
