Warming Winter Recipe
High Protein Low Carb Meal Under 400 Calories
As the colder days creep in, this cosy Chicken and Veggie Cauliflower Bake gives you that hearty winter feel without going off track. Itโs warming, simple, and completely 1:1 Diet friendly.
Ingredients (Serves 1)
100g chicken breast, skinless and boneless
150g cauliflower, roughly chopped
50g courgette, diced
30g spinach
Garlic powder, ยฝ tsp
Smoked paprika, ยฝ tsp
Reduced fat cream cheese, 1 tbsp (around 15g)
Parmesan cheese, grated, 10g
Fry light
Salt and pepper
Fresh parsley to finish
Instructions
Preheat the oven to 180ยฐC.
Heat the fry light in a pan and season the chicken with salt, pepper, smoked paprika and garlic powder. Cook for 6-8 minutes until golden and cooked through, then shred or chop.
Steam or boil the cauliflower and courgette for 5-7 minutes until tender, then drain well.
In a small baking dish, combine the cooked chicken, vegetables and spinach. Stir through the cream cheese so everything is well coated.
Scatter the Parmesan on top and bake for 15 minutes until the top is golden and bubbling.
Finish with fresh parsley and enjoy while hot.
