- 200ml cream

- Fresh chives for garnish (optional)

Instructions:
1. In a large pot, sauté the onion until soft.
2. Add the diced potatoes and vegetable stock.
3. Simmer until the potatoes are tender (about 20 minutes).
4. Blend until smooth, then stir in the cream.
