🍠 Sweet Potato & Cauliflower Curry 🌱

Looking for a comforting, nutritious meal that’s packed with flavour and plant-based goodness? This Sweet Potato & Cauliflower Curry is warming, filling, and perfect for a balanced dinner.

Serves: 3–4

Ingredients:
• 1 medium onion, sliced
• 1 tbsp extra virgin olive oil
• 2 cloves garlic, crushed
• 1 tbsp fresh ginger, grated
• 2 tsp ground cumin
• 1 tsp hot paprika
• 2 tsp turmeric
• 1 tsp ground coriander
• 1 can chopped tomatoes
• 240ml water
• 450g sweet potatoes, peeled & cubed
• 300g cauliflower florets
• 240ml semi-skimmed milk
• 70g cashew nuts
• Fresh coriander to serve

Method:
1️⃣ Heat olive oil in a large pan and cook the sliced onion for 3–4 minutes until softened.

2️⃣ Add garlic and ginger, cooking for 1 minute. Stir in the cumin, paprika, turmeric and coriander and cook for another minute to release the flavour.

3️⃣ Add chopped tomatoes and water, then bring to the boil. Add the sweet potatoes, season with salt and pepper, and simmer uncovered for 30 minutes.

4️⃣ Add the cauliflower florets and pour in the milk. Cover and cook for 10 minutes until the vegetables are tender.

5️⃣ Meanwhile, toast the cashew nuts in a dry pan. Serve the curry topped with cashews and fresh coriander, alongside rice.

Simple. Nourishing. Packed with flavour. 💙

• 10 Deadlifts
• 12 Push Press
• 15 Kettlebell Swings
• 20 Walking Lunges

Keep the pace steady, focus on good form, and take short rests if you need them. The goal is to move well, stay consistent, and get the work done.

Remember — you don’t always need hours in the gym. A focused session can make a big difference.

So I’ve just wrapped up our early morning sessions at Absolutely Fit Studio. This week in our accountability sessions we spoke about two key things: Discord posting and missed meals.

Discord is our main communication hub at Absolutely Fit. When you post your food, questions, and progress there, it gives me real data portion sizes, consistency, what’s working, what’s not, so I can progress your plan properly.

We also talked about missed meals. On our 12-week body transformation we often get clients to actually eat more food, just spread more intelligently through the day.

Smaller, regular meals support digestion, stabilise blood sugar, and help regulate hunger hormones like leptin and ghrelin.

Miss meals, and energy crashes, cravings rise, and fat loss slows.

Consistency with food, communication, and coaching, that’s where the results come from.”

Looking for something sweet that supports your goals at Absolutely Fit? 🍓💙

Try these Spring Protein Pancakes — light, fluffy, and packed with fuel for the day ahead.

What you need:
• 1 banana
• 1 egg
• 1 scoop vanilla protein powder
• 1 tbsp oats
• A splash of almond milk
• A dash of cinnamon
