🥗 Thai Chicken Buddha Bowl 🍗

Fresh, flavour-packed, and perfect for a balanced meal — this is a great option we’d recommend at Absolutely Fit Studio 💙

Ingredients:
• 200g skinless chicken thighs
• 2 tbsp extra virgin olive oil
• Juice of 2 limes
• 1 tbsp low-salt fish sauce
• 1 clove garlic, minced
• 2 handfuls salad leaves
• 1 medium cucumber, sliced
• 1 red onion, sliced
• 1 red pepper, sliced
• Fresh mint & coriander (a handful of each)
• Roasted peanuts (a small handful)

Method:
1️⃣ Season the chicken with salt and pepper. Heat 1 tbsp oil in a pan and cook until browned and fully cooked through. Set aside to rest.

2️⃣ In a small bowl, mix lime juice, fish sauce, garlic, and remaining olive oil to create your dressing.

3️⃣ In a large bowl, combine salad leaves and sliced vegetables. Drizzle over the dressing and toss well.

4️⃣ Slice the chicken and place on top of the salad.

5️⃣ Finish with fresh mint, coriander, and a sprinkle of roasted peanuts.

Fresh. Balanced. Full of flavour. 👌

Let me tell you!
Motivation is brilliant… but motivation comes and goes.

Consistency is what changes your body.

So if you’re waiting to “feel ready”… stop waiting.

Start with the basics this week:
Eat better.
Drink more water.
Get your protein in.
Move your body.
Go to bed a bit earlier.
And repeat it.

You do not need to be perfect.
You just need to be consistent enough for long enough.

Remember this:
“Success doesn’t come from what you do occasionally. It comes from what you do consistently.”

So this Monday, take action.
Not next week.
Not when life calms down.
Now.

One good day leads to another.
