🍠 Sweet Potato & Cauliflower Curry 🌱
Looking for a comforting, nutritious meal that’s packed with flavour and plant-based goodness? This Sweet Potato & Cauliflower Curry is warming, filling, and perfect for a balanced dinner.
Serves: 3–4
Ingredients:
• 1 medium onion, sliced
• 1 tbsp extra virgin olive oil
• 2 cloves garlic, crushed
• 1 tbsp fresh ginger, grated
• 2 tsp ground cumin
• 1 tsp hot paprika
• 2 tsp turmeric
• 1 tsp ground coriander
• 1 can chopped tomatoes
• 240ml water
• 450g sweet potatoes, peeled & cubed
• 300g cauliflower florets
• 240ml semi-skimmed milk
• 70g cashew nuts
• Fresh coriander to serve
Method:
1️⃣ Heat olive oil in a large pan and cook the sliced onion for 3–4 minutes until softened.
2️⃣ Add garlic and ginger, cooking for 1 minute. Stir in the cumin, paprika, turmeric and coriander and cook for another minute to release the flavour.
3️⃣ Add chopped tomatoes and water, then bring to the boil. Add the sweet potatoes, season with salt and pepper, and simmer uncovered for 30 minutes.
4️⃣ Add the cauliflower florets and pour in the milk. Cover and cook for 10 minutes until the vegetables are tender.
5️⃣ Meanwhile, toast the cashew nuts in a dry pan. Serve the curry topped with cashews and fresh coriander, alongside rice.
