W O R K S H O P 🍋
The baby is here. You've gone through pregnancy, birth, you're possibly breastfeeding and you're definitely knackered and slightly (or hugely) shell-shocked. This leaves you craving sugar, caffeine and anything you can possibly grab with one hand (the toddlers left over fishfingers anyone!?) to get you through the day. Sound familiar?

We've all been there. It's survival mode and so so often as a mother, our needs get overlooked. However, pregnancy is extremely nutrient demanding and so the period post birth is incredibly important for healing and restoring our body back to life.

At I am holding a series of workshops with the first one focusing on the new mother. In a supportive, relaxed and nurturing environment we will have a chat about easy to implement ways in which we can nourish ourselves in these first few months post partum. I certainly will not be suggesting you eliminate chocolate or the mid-morning brownie you've come to rely on to get through until lunch, however I can suggest ways in which you can ADD to your diet and lifestyle that may help you get through this period.

D I N S P I R A T I O N 🍽️
It’s been a while since I’ve done one of these 🫣 plus two posts in one day, whaaaaaaaat

Sausage and bean casserole 😋

Slightly hot for a casserole at the moment 🥵 but I fancied something a bit more substantial than picky bits/salad. Plus it’s a favourite for the whole family - even my fussy four year old will eat it!! (…if I mush up the veg and beans a little 🙄)

Serves 4 (plus leftovers if two of those are children)
✔️ 6/8 good quality sausages (ideally at least 90% meat)
✔️ 1 tbsp evoo
✔️ 2 garlic cloves
✔️ 1 red onion
✔️ 2 sticks celery
✔️ 2 carrots
✔️ 1 courgette
✔️ 1 pepper (any colour)
✔️ 1 can chopped tomato
✔️ 1/2 pint stock
✔️ 1 tbsp tomato purée
✔️ 1/2 tsp cumin
✔️ 1 1/2 tsp paprika
✔️ 1 can cannelloni/butter/kidney beans
✔️ 1 handful spinach

🍽️ fry the onion in the evoo for 5 mins until soft. Add the garlic and fry for another 2 mins
🍽️ add the sausages and brown on a low heat
🍽️ once browned, add the spices, the vegetables (apart from the spinach), the tinned tomato and the tomato purée
🍽️ leave to simmer until all veg is soft and the sausages are fully cooked. Keep stirring and adding stock so it doesn’t get too thick/gloopy
🍽️ add the beans and spinach for the last five mins to wilt/heat through
🍽️ serve with rice/bread/or potatoes. We had it with sweet potato mash 🍠

🌱for a veggie option, swap the sausages for good quality veggie ones or even better, other beans eg chickpeas etc

HEALTHY 🙌🏻 M U F F I N S
Whipped up chocolate muffins over lunch for school pick up snacks (well, one of 37482 snacks my kids will eat after school) and they are delicious!!

6 ingredients, 1 bowl - what more do you want!

✔️ 3 ripe bananas (mashed)
✔️ 1/3 cup self raising flour
✔️ 1/3 cup maple syrup
✔️ 1/3 cup nut butter
✔️ 1/3 cup milk/plant based mylk
✔️ 1/3 cup cacao
(Plus chocolate chips to sprinkle on top/in the mix. I also added a tsp chia seeds and a tsp flax)

Preheat oven to 180c, mix all together in a bowl (apart from choc chip topping). Spoon into muffin cases (I love these reusable ones) and bake for 20/25 mins.
