A nice warming dish full of mainly plant 🍀based foods nourishes your soul as well as your body.
Prepping for healthy eating 🥗makes sure you always have something attractive and wholesome and nourishing in the fridge .
Ingredients for the base mix:
1 small butternut squash
1 pepper
1 clove garlic
Fresh chilli or chili flakes to taste
100mg bulgar wheat
Half veggie stock cube or pot
450mls water
Herbs as you like
Optional toasted pine nuts or mixed seeds
Roast a small butternut squash , a pepper and flavour with some garlic , 🌶️ chilli and herbs 🪴 according to taste . (190 deg C fan oven for 30 mins).
Rinse 100g of bulgar wheat and pop it into the pan with 45ml of veggie stock . Boil and then simmer for 15 mins , leave to absorb moisture for 10 mins .
( if you're gluten free swap the bulgar wheat for buckwheat or quinoa. If you're in a rush you can buy the grains pre- cooked in sachets by Merchant Gourmet).
Stir it all together, season and add optional mixed seeds or toasted pine nuts.
You can keep this in your fridge for say 3 days .
Each day you can add something new :
1) I used spinach , beetroot and feta
2) A couple of slices of halloumi
3) Some tofu plain or marinated
4) A few slices of chicken
