Happy Halloween 🎃 Im celebrating this morning with these tasty pumpkin pancakes

➡️Pumpkins provide amazing amounts of carotenes which is converted by our bodies into vitamin A which is needed for healthy skin & eyes. The seeds themselves are also packed full of amazing nutrients including healthy fats, iron, vitamin B2 and fibre which helps to promote healthy gut health.

Recipe 👇🏻 makes around 8 small pancakes

➡️1 cup flour, I used rice flour to make it GF
➡️1 tsp baking powder
➡️Pinch of salt
➡️1tsp cinnamon
➡️2 tbsps sugar
➡️1/2 cup pumpkin puree
➡️1/4 cup of milk
➡️1/4 cup yogurt
➡️1.5 tbsp butter
➡️1 egg

Method
1️⃣Mix together all the dry ingredients
2️⃣ Mix together all the wet ingredients then pour into a well made in the dry ingredients and mix well
3️⃣Heat some coconut oil in a large frying pan. Once warm spoon in around 1tbsp of the pancake mixture per pancake cook for around 2mins each side

💯Serve with yogurt, banana, sprinkling of granola, honey and top with those amazing pumpkin seeds

Huge good luck to everyone running London marathon today. 🌟

I now know first hand how many obstacles a person faces when running a marathon, both physically & mentally. Not just during the race either, but also during the months of training. A marathon distance is a huge acheivement so chin up and be proud of yourself.

First run back after one full week of recovery from Brighton Marathon ✅

💆🏻‍♀️I gave myself plenty of time to rest & recover from the stresses a marathon puts on the body & today I went for a nice easy 30 minutes. The weather was perfect for a run and it was nice not having to put a time, distance or speed on it.

This cold weather has me turning to hearty dishes & Veggie curry has fast become one of my faves. Its a quick & easy dish to put together, provides loads of protein, fibre & vitamins and just tastes fab!

✅The recipe can also be manipulated to use up any of those veggies left over in your fridge. I love to make extra portions to have for lunch the next day

Ingredients, serves 2
➡️1tbsp coconut oil
➡️1small red onion, diced
➡️1tsp cumin seeds
➡️2 crushed garlic cloves
➡️1tsp ginger paste
➡️1tsp chilli flakes
➡️1tsp garam masala
➡️1tsp turmeric
➡️1 tomato, diced
➡️1 can chopped tomato’s
➡️2 handful green beans, chopped
➡️1can chickpeas

Method
1️⃣Melt the oil in a large saucepan then add the onion for around 2mins
➡️Add in all the spices and cook for a further 2-3mins
➡️Add in the tomatoes and green beans and bring to boil, reduce heat and simmer for 10mins
➡️Pour in the chickpeas (along with the water) cover with a lid and simmer for around 20mins
➡️Once ready serve with brown rice, coconut yogurt & fresh herbs

🏃🏻‍♀️Brighton marathon done ✅

☀️I definitely under estimated how tough it would be. The first half was full of hills, there wasn’t any hiding from the sun and at around 20k I got the worst stitch that just refused to leave me alone.

😡Getting to mile 20 running around an industrial estate for 3miles with no crowds, seeing people collapsing from heat & exhaustion and then my ear phones running out of charge was mentally challenging

🏁The finish line seemed to get further and further away & in the end I found out it was! so I actually ran 26.5miles, may as well call that an ultra 💁🏻‍♀️

But the main thing is I finished and I am so incredibly proud of my achievement and everyone else’s yesterday. Thank you to for keeping me going throughout my training and for cheering me on yesterday & for building my strength in the lead up.

💕Also massive thank you to everyone who sponsored me & donated to I was so pleased to have been able to support this amazing charity in some small way

Kit is ready for Brighton marathon tomorrow.

✅A good sports bra ….for obvious reasons
✅Comfortable socks, sweat wicking, anti blister and arch support are my go to’s. If you do buy a new pair for the race give them a wash first
✅Chaffe cream…because you never know
✅Gels and food to keep energy levels up. Goes without saying these must have been practiced with in training
✅Playlist & podcasts ready & earphones fully charged
✅Race day top, taken out for a practice run prior along with all other kit including trainers 👟
✅Cap to protect from sun glare, along with SPF

➡️What is HIIT training?
HIIT training is an amazing style of exercise that involves training at a high intensity for a short period of time, resting, and then jumping straight back into the exercise again.

⚠️However there are risks involved. Some of the main ones I see is poor form, which can increase the risk of injury, along with over training which puts added stress on the body.

🌟HIIT training should complement your workout routine ensuring other areas such as strength training, mobility, good nutrition & sleep hygiene are considered

No boring lunch here - Spiced chickpea omelette filled with smoked salmon & avocado hummus

Well needed fruit & nut energy bites after feeling under weather this week ☔️

No added sugar, full of Iron & super easy to make, these will be coming on my marathon run with me next week. They are also great to keep in the fridge or freezer for a pre or post workout snack

Receipe👇🏻
➡️309g cashew nut halves
➡️150g medjool dates
➡️150g raisins
➡️1tbsp water

1️⃣Place everything in a blender and blitz until it forms a ball
2️⃣Place on clingfim and mould into a square shape. Wrap in the clingfilm and place in the fridge for around an hour until set
3️⃣Once set cut into 16 square bites
