🥧 Comfort Food, But Make It Healthy! 🥕🍗

Who says comfort food has to be heavy? These Chicken & Leek Pies are the perfect balance of cosy and healthy, with golden filo pastry keeping things light and oh-so-crispy. Pair them with chunky sweet potato chips for a meal that’s as satisfying as it is guilt-free! 💛✨

What you’ll need:

1 large sweet potato (chunky chips, please!) 🍠
4 tsp olive oil
2 chicken breasts (bite-sized chunks) 🍗
1 leek (finely sliced)
1 carrot (chopped) 🥕
225ml low-sodium chicken stock
2 tsp wholegrain mustard
85g light soft cheese
2 tbsp chopped tarragon leaves 🌿
2 sheets filo pastry

How to make it:

1️⃣ Preheat your oven to 200C/180C fan/gas 6. Toss the sweet potato chips with 2 tsp olive oil, season, and roast for 30-40 mins until golden and crisp.
2️⃣ Meanwhile, heat 1 tsp oil in a pan. Brown the chicken, set aside, then soften the leek with a splash of water (about 7 mins). Add the carrot and cook for 3 mins.
3️⃣ Pour in the stock and boil until reduced by half. Stir in the mustard and soft cheese, then return the chicken to the pan. Add tarragon and season to taste.
4️⃣ Divide the mixture into 2 small ovenproof dishes. Scrunch up the filo sheets, top each pie, and brush with the remaining 1 tsp oil. Bake alongside the chips for 15 mins until golden perfection.

✨ Pro tip: These pies are freezable, so make extras for a future cosy night in!
