It’s not whole foods like pasta or bacon that are fattening, it’s usually what you put WITH it.

What a wonderful taster yesterday. Thankyou so much everyone for your efforts. 9:30 we didn’t take a photo did we?

We had things like:
Carrot and cheese wrap
Mini jacket potatoes with bacon
Mini jacket potato with mushrooms
Spring Cous cous salad with feta
Asparagus, sweet potato and salmon quiche
Fruit selection
Tabouleh salad
Banana breakfast bars homemade
Sweet chilli coronation chicken gluten free Schar ciabatta bites
Rainbow slaw ham and beef sauerkraut bites
Pop chips steak and cheese and chive flavour gluten free

Corned beef Pattie:

Has caused a lot of attention this week in group. It’s delicious:

INGREDIENTS:
500g cooked potato mashed.

A chopped caramelised onion x1 (normal onion cooked slowly till soft and golden)

200g tin of lean corned beef (5 Swips)
Break this up with a fork in a mixing bowl add garlic salt, sprinkle of sage, I think I broke up in it a veg stock cube, 1tsp tablespoon of Worcestershire sauce and soy sauce.

Mix everything together well with hands or a food processor if you have one. And create patties (with wet hands) so it doesn’t stick.

I found the patties easier to roll in the egg as a ball. Then flatten it into a Pattie. Then Roll them onto bread crumbs. ( I used 60g of wholemeal bread but you could use 70g as a healthy extra.

Cook in oven for 25 mins sprayed with fry light on 200 c or air fryer.

We did cooked carrot chips with normal as chips and I had oven baked cale. Others had veggies!

I made a beautiful pancake at the weekend.
40g oats
2 eggs
Plain yogurt 0%
Vanilla extract
Cinnamon sprinkle in it

Mix and pan fry till browned.

Added Alpro vanilla yogurt (1 swip for 100g), satsuma and 1tsp salted caramel choc shot

Thankyou Sainsbury's for the choc shot and Tesco for Alpro yogurt :)

Anyone made a cheese burger quiche before? This is from pinch of nom. It was lovely.

I made a few changes. To make it more FREE:

Instead of:
200g reduced fat cream cheese: I used nearly a tub of seriously strong light cheese 110g with 100g of quark plain. The tub is 125g so make sure it’s weighed 😛 (2 calcium choices)

60g reduced fat cheddar: 80g of 50% lighter Tesco cheese (2 calcium choices)

In the end. 4 healthy calcium choices. Split between 4 people. So only 1 each x

HALF TERM:

What I ❤️ about half term is the family time. wellscinema here we come. Really enjoyed “Stitch head” We’ll be back to see “Goat” soon.

The fact that half term, used to involve eating out but now my youngest is totally in ❤️ with smoked salmon. A sushi bowl for lunch is what she asked for WHAT???? We must be doing something right. All on plan, delicious and filling. Plus beautifully balanced. We even made it together too.

Some yummy meals over the weekend 🙂 Hubby made Gnocchi it was DELICIOUS. Kids prefer it cottage pie using the same ingredients. All free but using some seriously strong cheese in the mash which can be used as a calcium healthy extra.

We made pizza wraps. Skye had a friend over they loved it. They made their own. 1 wrap 1 fibre choice.

I made a curry last night. Feeling pretty pants but it was lovely in the slow cooker. I added mushy peas to the sauce and it made it feel really naughty and thickened it up.

Skye said “Mummy, this is even better than pasta” that’s a HUGE compliment she’d turn into pasta if she ate much more 😂😂😂
