S o u p S e a s o n 🍅🥦
Did you know that cold, raw foods are harder for the digestive system to break down, particularly for people with weaker digestion.
Cold foods also cool the body internally, this can leave you feeling bloated, chilly and drained rather than warmed and nourished.
As we head deeper into the colder months, try more warm, cooked foods that stoke the digestive fire and create warmth from within.
Cavolo Nero soup is a traditional Tuscan recipe and one of my favourites! Make it your own, add any ingredients you like or need to use up!
Seasonal Cavolo Nero Soup
Ingredients
Olive oil
1 red onion, finely diced
3-5 garlic cloves, chopped or minced
1-2 leeks, sliced
3-4 carrots, chopped (optional)
Good bunch of cavolo or any leafy greens
Roughly 300g fresh tomatoes or 1 tin
1-2 tins of beans, such as butter beans or chickpeas
Roughly 1 litre of veg stock
Sourdough or fresh bread to serve (optional)
Method
Saute the onions and leeks in a little olive oil for 5 minutes or so. Add the garlic and until fragrant. Add the carrots, cavolo, beans, tomatoes and stock, season well, cover and simmer gently for 30 minutes or so until the veggies are tender. Throw in any veggies or leafy greens you have laying around.
Serve with fresh bread, enjoy! 🍅🥦🫛
